Wild Mushrooms + Wild Yeasts + Well Seasoned
We love all things wild and foraged at the Wild Beer Co and we are surrounded by a smorgasbord of various mushrooms in the Somerset countryside.
Fungi are at the heart of our brewery. Yeasts are micro fungi that do the hard work in making beer, we just feed them and put a roof over their microscopic heads. But it’s the amazing flavours and untameable nature of wild yeast strains that really excites us and when it came to pairing macro (mushrooms) with micro (yeasts) in a beer, it had to be The Penny Bun (aka, Porcini, or Ceps). Not just for the amazing nutty, earthy flavour, but because they are also untameable (mankind has so far been unable to cultivate them).

Keg at Beaverex '18 Day I, 07/09/18. Lightly hazed golden with a decent off white cap. Nose is mellow citric peel, straw, musty, grains. Taste comprises damp hay, light shrooms, lemon tang, herbal bite, umami, earthy. Medium bodied, fine carbonation, semi drying close. Ok for a small pour, gets the mushroom across in a subtle enough way but wouldn't want a whole lot of this number.

Tap@Taphouse, Copenhagen (31/10/2018) - fuzzy golden coloured pour with a white head. Tart fruity with some motes of grapes, some straw, hay, wood, grass, medium body, dour fruity finish.

Beaverfest. Keg. Hazy gold beer, small pale cream colour head. Light dry palate, decent fine minerally carbonation. Thin malts. Mildly tart lemon. Light musty mushroom. Dry finish. Admirably experimental but just odd.

Draft. A golden beer with a beige head. The aroma has notes of malt, citrus fruits, apples, and brett. The flavor is sour with notes of brett, lemons, apples, and mushrooms, leading to a tart finish.

[ As Wild Beer Breakfast of Champignons ].Unclear medium orange yellow colour with a small, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, pale malt, tart, fruity, gooseberry, grapes. Flavor is moderate sweet and light acidic with a long duration, tart, dry, gooseberry, fruity, dry dry. Tap at Unorthodox. Quite simple straight-forward sour beer, somewhat lacking in terms of complexity. Mushrooms barely present, if at all. Easy drinking, even if a bit boring.

Lunch visit to Umeda! Wild Beer Breakfast of Champgnons 4% A golden brew made with mushrooms and it has a rich musty funk that’s quite Belgian and even almost geuze like. The light dry beer body and acidic tart lemon reinforces that impression while there are just hints of savory mushrooms right before the finish. Good but I don’t think it will pair with my hamburger steak as well as I’d hoped. ---Rated via Beer Buddy for iPhone

Draught at BeerGeek Bar. Cloudy, gold colored. AROMA- wild and funky, apricot, spicy, maybe champignons. FLAVOR- quite salty and sour, spicy, herbs, pickles. Medium bodied.
