Wild Mushrooms + Wild Yeasts + Well Seasoned

We love all things wild and foraged at the Wild Beer Co and we are surrounded by a smorgasbord of various mushrooms in the Somerset countryside.

Fungi are at the heart of our brewery. Yeasts are micro fungi that do the hard work in making beer, we just feed them and put a roof over their microscopic heads. But it’s the amazing flavours and untameable nature of wild yeast strains that really excites us and when it came to pairing macro (mushrooms) with micro (yeasts) in a beer, it had to be The Penny Bun (aka, Porcini, or Ceps). Not just for the amazing nutty, earthy flavour, but because they are also untameable (mankind has so far been unable to cultivate them).

Bottle, 0.33l, shared with Leo & Dasa. Aroma of yeast, vinegar, mushrooms with earthy and funky notes. Pours hazy straw color with thin quickly diminishing off-white head and sparkling appearance. Taste starts light sweet and sour grainy, following is yeasty, citrusy, umami and woody, mouthfeel is crisp and dry, while finish is mild bitter. Light body, slick texture and lively carbonation in palate. We are the champignons...

Bottle sample at a tasting at Max's place. Thanks Yoav. Pretty clear yellow. Funky barnyard, sweat, fruitiness, juicy. Really good and refreshing.

Unclear, yellow-golden colored, small white non lasting head. Aroma is fruity and tart with plenty of Bretty funkyzeit, bit mushrooms, lemon citric notes. Taste is medium- sweet, light pale malt, fruity, Bretty funk, moderate sourness, lemony citric sour, dry finish. Light bodied, soft- carbonation, oily. Zesty. Quite enjoyable for summer. (bottle, Primoz, Ljubljana)

A hazed amber ale with a thin white head. In aroma, nice fruity malt with light lemon, light Quince, tropical fruit, light Epsom salts, very nice. In mouth, a nice tart mix of lemon pulp, light tropical fruits, light mineral notes, light earthy notes, very nice and complex. On tap at Bar Lupulus.

Draft @ Tilquin English Beer Festival 2018. Hazy golden colour, white foam. Nose of lime. Taste is tart, fruity, refreshing. I don't get the mushrooms.
