Wild Mushrooms + Wild Yeasts + Well Seasoned

We love all things wild and foraged at the Wild Beer Co and we are surrounded by a smorgasbord of various mushrooms in the Somerset countryside.

Fungi are at the heart of our brewery. Yeasts are micro fungi that do the hard work in making beer, we just feed them and put a roof over their microscopic heads. But it’s the amazing flavours and untameable nature of wild yeast strains that really excites us and when it came to pairing macro (mushrooms) with micro (yeasts) in a beer, it had to be The Penny Bun (aka, Porcini, or Ceps). Not just for the amazing nutty, earthy flavour, but because they are also untameable (mankind has so far been unable to cultivate them).

Draft sample @ Tilquin English Beerfest 2018. Dorée léger sur côté paille, col blanc. Arôme met de suite l'accent sur le côté aigre propre à WildBeer avec un effet de sous-bois voire de umami champignon assez prenant, le tout sur des notes de brett et grains en rétro. Palais est aigre fin, brett et tropical, fruité et un effet champignons discret mais qui, une fois décelé, apporte une note moite mousse de sous-bois, forêt.

5/V/18 - sampled @ Tilquin English Beer Festival - BB: n/a (2018-604) Thanks to the Belgian ratebeer crew for sharing today's beers!

Pretty cloudy orange blond beer, practically no head. Aroma: smells pretty sourish, bit fruity, some citrus. MF: soft carbon, medium body. Taste: pretty acidic start, lemony, quite some mushroom indeed, bit spicy, damp soil. Aftertaste: fruity, more mushroom, weird, but good!

Sampled @ Tilquin English Beer Festival 2018. A hazy bright golden beer with a small most good lasting white head. Aroma of sour pale malt, grains, some grapes. Taste of sour pale malt, grains, white grapes.

Bottle at Cafe de Spuyt. Almost clear dark golden with a small head. Mild with funk, yeast, some herbs and mushrooms. The body was light and the finish was medium tart.

Bottle, 4.1%. Slightly hazy amber with tiny head. Aroma is malt, lemon, spices, bread, pepper and wood. Flavour is malt, baking yeast, bread, little lemon, wood, spices, little bread, pepper, little sour and a little dry.

Nice fizzy-creamy mediumlasting head, slightly hazy. Aroma is slightly dry sour-ish, sorrel, dough, cinnamon, hay, grass, oak, mild vinegar, earthy mushroom, nuts, fruit stones. Taste is slightly dry sour-ish, mild vinegar, sorrel, soda powder, unripe berries, nuts, fruit stones, earthy mushroom, hay, dough. Medium bitterness, slightly dry sour-ish mineraly. Nice, very interesting beer...

Bottle. Beer Central, Sheffield. Colour of Lucozade. Slimmest ring of white. Nose has oak. Cider apple lolly. Some earthy funk. Taste is soft sour and fairly dry. Bright mouthfeel. Soft carbonation. Tangy apple finish. The mushrooms in here completely passed me by.

Draft at Sloan. Aroma of tart, earthy veggie, caramel and malt. Flavor has soft acidic sourness, tart, earthy mushroom, malt and soem caramel. Nice stuff.

Keg at the Beer Shop, Hitchin. Amber/orange, clear, no obvious head save for a tiny white ringlet. Herbal funk, yeasty, vegetal and basement odours. Decent without being over the top. The taste is tart and refreshing, and I get much more of the mushroom in the back of the tongue. Short tart finish, with a bit of fungal aftertaste. Verdict (or should I say the morel of the story): a neat idea, and one that works in theory as well as practice. Not particularly memorable but enjoyable.

Keg at The Keans Head , Nottingham, Friday 21st April 2017 in the company of Dad and Pauline, we’re off to the Ferocious Dog gig at the Rescue Rooms. Hazy amber with a slim white filmy head, it’s tart and tangy, zippy and buzzy but with a slightly rustic edge, not getting that much mushroom. Interesting. A6 A4 T7 P3 Ov13 3.3
