Wild Mushrooms + Wild Yeasts + Well Seasoned

We love all things wild and foraged at the Wild Beer Co and we are surrounded by a smorgasbord of various mushrooms in the Somerset countryside.

Fungi are at the heart of our brewery. Yeasts are micro fungi that do the hard work in making beer, we just feed them and put a roof over their microscopic heads. But it’s the amazing flavours and untameable nature of wild yeast strains that really excites us and when it came to pairing macro (mushrooms) with micro (yeasts) in a beer, it had to be The Penny Bun (aka, Porcini, or Ceps). Not just for the amazing nutty, earthy flavour, but because they are also untameable (mankind has so far been unable to cultivate them).

Bottle from the Strait and Narrow. Lincoln. Slightly hazy golden colour with a thin white head. Aroma is citrus and funky farm yard I guess mushrooms. Taste is tart citrus. Smooth body.

42nd Floor Bottleshare. Thanks to Dan. Hazy gold beer, small pale cream colour head. Smooth and fairly dry palate, decent fine carbonation. Tangy citrus fruits, a trace of lemon acid. Mild mushroom and a little floralness. Curious beer.

Thank you! Sampled draft + draft glass @ Delirium Hoppy Loft. Clear orange golden, little head. Nose is basic sour, lemon juice, acidity, basic sour, low funk that may or may not be white mushroom,... Taste is no white mushroom, basic sour, lemon, very basic puckering, sourish, lemon, acidic, citrus sour, faint funk,... Low carbonation, easy lemon sour, very basic but pleasant to drink for sure

Keg at BD Soho, 13/03/17. Pale golden blonde with a decent off white covering. Nose is pissy citric strands, green berry funk, wood must, damp hay, earthy. Taste comprises pissy lemon shreds, funky mushroom farmhouse soup, nutty, damp straw, barnyard. Medium bodied, fine carbonation, drying close with a puckering tang. A fun sour ... plenty of dpeth for the ABV

Mein vorerst letztes BIer der Brauerei. Diese Brauerei liegt inmitten einer Grünanlage in Somerset und der Firmen-Mycelogist ist begeisterter Schwammerlsucher (Pilz-Sammler) und wollte in einem Bier seinen Lieblings-Pilz "Penny bun" (gemeiner Steinpilz bzw. Boletus edulis) wiederfinden, nachdem er Steinpilze auf seinem Toast verspeiste. In einem Sour Ale mit wilden Hopfen wurde ihm dieser Wunsch erfüllt. Dieser Hopfen ist lt. Etikett auch für das außergewöhnlich nussige und erdige Aroma verantworlich. Den Braumeister begeisterte das Faktum, dass Steinpilze nicht gezüchtet werden können, was ihm einen wilden unzähmbaren Charakter gibt, den die Brauerei ja so liebt. Meiner Meinung nach merkt man nicht viel von den Steinpilzen, das das BIer sehr sauer ist und diese Säure überdeckt den meisten anderen Aromen, daher würde ich es nicht weiter empfehlen.

Bottle shared in London - cheers! Pours hazy deep gold with a creamy topping. Tangy lemon and tangerine in the nose, a little funky melon. Light sweet flavour with moderate lemony acidity, some tangerine, wheat. Light bodied with spritzy carbonation. Finishes with a bit of acidic bite, more lemon, hay. Enjoyable.

Bottle shared on Level 42 14/03/2017. Many thanks to Daniel for this one. A hazed golden orange coloured pour with a fine white head. Aroma is woody earthy, tangy, lemon, . Flavour is is salty lemon, lemon rind, spicy sour, hint of acetic. Palate is semi sweet and sour, highish carbonation, semi drying finish. Pretty good. Didn’t get much mushroom.

Bottle thanks to Danny. It pours hazy orange with a small white head. The aroma is earthy, musty, funky dirty, mushroom, massive umami, bread, funk and dirt. The taste is dry, sour, bitter, tart, lemon sherbet, citric acidity, musty, cheesy, kombucha, earthy, dirt and umami with a dry finish. Medium body and moderate carbonation. A bit weird, but not so bad.
