Big Bad Baptista is inspired by traditional Mexican coffee, Café de Olla, which is served with cinnamon and piloncillo, an unrefined sugar. The Cinnamon adds another layer of complexity and accentuates the earthy character of Mexican Coffee, but more importantly, it captures the essence of a place and its culture.

Black color, compact beige head. Intense aroma, dark pure chocolate, cinnamon, tobacco. Rich dark chocolate flavor, on the dry side; dark biscuits, cinnamon, with hints of vanilla, walnut, oak, hints of tobacco; so many layers, and very powerful. A bit more roasty in the final.
Wonderful.

Taster at the Denver taproom - black pour with a tan head - nose and flavors of smoke, coconut, cinnamon, oak, vanilla, espresso - deep, dense, with apparent alcohol, but not as boozy as you’d expect - finish is whiskey and strong coffee - I dig it, but couldn’t handle a full glass.

Poured from a 22 oz bottle. Aroma is chocolate forward with moderate cinnamon notes. Light vanilla and roast notes with hints of oak. Light bourbon notes with moderate coffee notes. Hints of fruitiness from the coffee. Pours black with a medium small, thick, mocha head that steadily recedes to the edges where a thin film lingers for a bit. Medium light lacing and medium legs. Flavor is fairly sweet with lots of chocolate. Some moderate coffee notes and balanced cinnamon. Light vanilla and roast notes. Lighter oak and bourbon. Hints of alcohol spice. Lots of coffee, cinnamon and chocolate. Hints of sweet fruit from the coffee and a touch of caramel from the bourbon. Medium bitterness. Mouthfeel is medium full bodied with medium carbonation. Low astringency and low, but present alcohol warmth. Overall, I’m not a huge fan of spiced stouts where there is a bunch of cinnamon but this one works well. I think the lack of pepper actually helps and the cinnamon is well balanced with the coffee and chocolate. This might be my favorite stout that includes cinnamon. Vanilla bad bourbon could be a touch stronger though.

On tap at the Growler Guys PDX, pours black with a small tan head. Aroma brings out lovely notes of cinnamon, coffee, and a touch of cocoa - smells decadent. Flavour is decadent, with a wonderful blend of espresso and cinnamon duking it out. Notes of cocoa and light vanilla underneath. Wonderful variant of the regular Big Bad Baptist that we all know and love.

Bottle thanks to Rob. Pours a dark brown with medium beige head that lasts. The aroma is strong cinnamon, roast, dark chocolate, vanilla. Thick body, similar flavors to nose, nice roast, really enjoyed this.

Bomber. Pours a jet black color with a medium light brown head. A huge coffee nose, roast and vanilla. The flavor is massive sweet coffee, vanilla, spicy, cinnamon, but really smooth. Cocoa, chocolate. But the coffee isn’t overpowering, big roast, just fits together very well. Super drinkable. Lovely.

Bottle shared by Jack, thanks! Pours black with a brown head that dissipates to the edyes. Aroma has lots of vanilla and coffee supported by cinnamon, dark grains and roasted malts. Flavor is similar with sweet vanilla and coffee with a good amount of dark grains, cinnamon and a bit of roasted malt.
