Big Bad Baptista is inspired by traditional Mexican coffee, Café de Olla, which is served with cinnamon and piloncillo, an unrefined sugar. The Cinnamon adds another layer of complexity and accentuates the earthy character of Mexican Coffee, but more importantly, it captures the essence of a place and its culture.

Sample Thnx to Eric ! Pours very dark brown, OK white head. Smell is rich, dark malts, sharp peppers. Taste is full, but mostly peppery. Some heat. Rich roasty aroma in the back. Nice! Had no clue what it was, and it seems pretty far off off the description, but it did actually taste like it was a habanero-or whatever imperial stout. impressive they did it with different flavor compounds to achieve a fooling experience !

Draft pour at Brouwers, Seattle as part of their Stout Fest 2017 lineup. Awesome to find this one. Chocolate dark brown pour with a tan cream foam head. Huge aroma of chocolate, spice, maple, vanilla, coconut, and marshmallow. Creamy body, cinnamon, slightly spicy chocolate constant. Quite a delicious treat of a beer here. A little dusty. Doesn’t get more chocolate heavy than this one here. A big chocolate cake in a beer glass. Amazing.

Bouteille 650ml. Couleur noire opaque, mousse moka. Arôme de café mexicain, cannelle, pointe boisé. Goût de cacao, chocolat noir, malt torréfié, amertume moyenne-faible, café mexicain, whiskey. Carbonatation faible, corps moyen-dense.

(On tap @ Bottlecraft Little Italy, SD, April 2/17) Pours black with a tight dark tan head that lasts well with spotty lace. Aroma is chocolate milk, vanilla, cacao, brewed dark roast coffee, some dusty toasted malt, cinnamon, a touch savoury, dark malt there supporting the additions. Flavour is lightly sweet, dark malt, subtle bourbon, vanilla, chocolate, creamy, a hint of wood, spicy cinnamon shows up late, black coffee and roast there too, a little drying alcohol. Smooth. Medium full body, soft carb. Lovely. It’s not insanely unctuous but there is good flavour concentration and it’s quite sippable.

22oz bomber shared by Ryan. Awesome, massive aroma. Really deep flavors, but smooth. World Class. Spices, chocolate, all blend together perfectly.

2016. 22 oz bottle. Super tasty stuff. Black with a light brown head. Light sweet bourbon aroma. Big sweet chocolate fudge note. Moderate roasty coffee. Some vanilla. Mild coconut. Pretty big lactose flavor in the taste. Nice and sweet. Creamy, full mouthfeel. The pepper shows up here with some mild to moderate spice. Very easy to drink. Lots of chocolate. Great stuff.

650 ml bottle. Pours black with moderate tan head. Aromas of cinnamon chocolate cake, whiskey, sweet molasses, coconut and rich roasted malts. Flavors of chocolate covered raisins and coconut, cinnamon, bitter black coffee tempered with sugar, licorice, and whiskey. Quite a hot finish, but superb.

16 ounce Prowler bought at Liquor Shed. $7.
Pours pitch black, healthy head of tannish foam, long lasting foam, look at that lacing.
As soon as I unscrewed the cap, aromas of cocoa, cinnamon, and coffee permeated the air. A very aromatic Imperial Stout.
Cocoa, cinnamon, coffee flavours in that order. Well integrated, divinely smooth, the abv is hardly noticeable for the most part until after the swallow. Yummy.
Full bodied with the right amount of carbonation.

650ml bottle (thx, Justin W.!) at Alex’s. Pours (like an oil) an opaque very dark brown with a dark beige head. Aroma is coffee, cinnamon, chocolate. Taste is the same. Very good, but I would prefer it to have more body.

Black color, compact beige head. Intense aroma, dark pure chocolate, cinnamon, tobacco. Rich dark chocolate flavor, on the dry side; dark biscuits, cinnamon, with hints of vanilla, walnut, oak, hints of tobacco; so many layers, and very powerful. A bit more roasty in the final.
Wonderful.
