Two yeast strains were used to create this unique Belgian-style ale. The first, a Saison yeast, establishes the flavor foundations of a classic Belgian-style ale. The second, our house strain of Brettanomyces yeast, contributes myriad flavors including pear, apricot, graham cracker, and bread crust. A portion of Interlude is aged in red wine barrels, which imparts a distinctive vinous, plum character and a dry, almost tannic, finish.

Light sour funky. Great carb, great mouthfeel lingering sourness. Sour citrus finish. This is an absolute work of art. Outstanding!

Lovely brett beer, with just enough funk to add a musty complexity to the mild malt sweetness and the mildly tart vinous notes. Finishes with an oak-inspired bitterness mixed with vanilla and grape. Delicious.

2015 vintage on tap at Capone's. Pours a clear, bronze color, with a small, off-white head. The aroma is pear, lemon oils, cloves, Riesling, and brown sugar. Sweet and sugary, with a lovely, bright tartness. Light, smooth, and clean. Subtle and very well made.

...how have I never rated this? Looks like a hazy orange. smells like a wild wine with kiwi and bread dough. cereal, very yeast forward, light booziness with a warming nature. little bit of grate and some lemon. tasty.

2006 bottle. Orange color. oaky leathery grapefruit aroma, like a soft matured geuze. Horse blanket. Oaky, sour, leathery flavor with grapefruit, lemon, grapes. malty, alcohol in the background. A firm flowery hop character. Lots of character and complexity in this world class beer.
