When we first got our noses in and hands on the experimental hop, then known only as HBC 369 CV, we knew it was something special. We wanted to make a lower alcohol IPA that didn’t drink like many others we tried. There was good hoppiness to most of them, but the body seemed lacking.
We went to work on solving this, and it took a bit of time. When we were finally convinced our session IPA was ready for prime time, HBC 369 had been named: Mosaic.
We employ this chameleon cone -with its exceptional palette of flavors- at each stage in the hopping process. Paul has actually created a lower alcohol session ale with the flavor and body of an American IPA. This beer has developed a following in the active lifestyle crowd, especially with cyclists, but it’s also a great beer when you just want a little more hang-time with your IPA. Dedicated to our hop-loving friend, David Moes, we brew this beer for true hop heads.

Bottle at home. Aroma is biscuity malt, tropical fruits, piney hops, resinous, grapefruit, hint of caramel. Flavour is light sweet and moderate to medium bitter. Body is about medium. Not very crisp or fresh, but has a nice resinous hoppy character.

Bottle. Golden pour. Aroma and taste of malt mostly, with some caramel, bitter grassyness and pine. No mosaic around. Bit old and should not have been served anymore by the bar.

Bottle to pint glass, pours a clear golden color with a thick finger of creamy beige head. Lots of sticky lacing throughout. Ripe aroma of citrus and tropical fruits, piney and dank. Sweet taste with minimal bitters. Citrus and sweet malt flavors, a little grassy.

(bottle, 35.5cl) Hazy, amber to copper colour with a beige and short foamy head. Mildly toasted malty aroma with hints of caramel and cough syrup, backed by piney, spicy and mildly fruity hops. Moderately sweet and slightly bitter flavour, rather light bodied but far away from being watery, modest carbonation. Leafy and slightly toasted malty base with caramel, almonds/marzipan and balanced hoppy notes of pine, herbal-spice, grass and delicately fruity hints; quite lingering sweet-bitter finish. Rather uncommon session IPA but nevertheless an interesting one. 17.VII.17

Bottle. Orange color with white head. Aroma is piney, resinous, slight toffee, tea grassy. Taste is the same, quite earthy. Oily mouthfeel. Maybe not the freshest anymore, but it’s good!

Grasig hopfiger Antrunk, frisch, deutlich bitter. Der Hopfen steigt an, trocken, moderate Herbe. Wenig würzig, die Hopfigkeit bleibt angenehm. Gut. 11/10/10/11/9/11

330ml bottle from Saveur-Biere. Clear orange amber colour, off-white foam head leaving lots of lacing and aroma of tropical fruit, tangy citrus, hoppy resin. Taste is malt caramel with fruity tangerine citrus, pine, hop resins, and grapefruit bitterness. Light bodied, soft to medium carbonation, dry lingering bitter finish. Nicely drinkable.
