Prairie Gold is a dry, highly effervescent saison fermented with a mix of ale yeast, wine yeast, lactobacillus and 2 strains of brettanomyces. This beer highlights the various yeasts and bacteria used to make it. Lemon, pear, white wine grapes, and a touch of funk dominate the flavor and aroma in this champagne like beer.

Bottle from a trade. Hazy light gold with huge carbonation that constantly feeds a pillowy bubbly white head. Lemons tart cherries and earth funky hit my nostrils first. Earthy with faint bready malts and spice deep underneath. The flavor is mostly tart lemony with bits of sour cherry and vinous notes. Earthy funk rounds this out nicely. Medium body spirited carbonation. Pretty decent funky saison.

Bottle, 0.50l. Initial pour with an explosion and 1rd of a beer spilt :( Hazy deep straw color with thin frothy white head and sparkling appearance. Aroma is vinous, yeasty, citric and funky with brett note. Taste starts sour citric and light sweet grainy, following is vinous, funky, mild peppery and smooth lacto, mouthfeel is crisp and dry, while finish is mild bitter. Light body, thin texture and average carbonation in palate. 7% ABV not felt at all, very refreshing...

hazy golden colour, medium sized white head, which disappears quite quickly; aroma of wet wheat, barnyard, wet leather, earthy and lemony notes; sourish-bittery taste with bread, lemony somehow metallic and tart notes; armando warned me, it has quite agressive carbonation, so I should be careful during opening - well, I tried to be: I chilled the bottle as he recommended then I handled the opener very gently: first it seemed that everything is ok, but after having some peaceful seconds, it started to explode from the bottle :-) It is a really ’wild’ beer, I would say...more wild, than sour :-)))))
