Hmmm. We wonder if anyone will buy a beer with the word "rot" in the name?
This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced with our friends at Alexandria Nicole Cellars in Prosser, Wash.
The first addition is unfermented juice, known as must, from viognier grapes that have been infected with a benevolent fungus called botrytis. This noble rot reduces the water content in the grapes while magnifying their sweetness and complexity. The second is pinot gris must intensified by a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind.
"This is the absolute closest to equal meshing of the wine world and the beer world thats ever been done commercially," says Dogfish's Sam Calagione.
Noble Rot is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish.
Noble Rot first went on tap at our brewpub in February of 2011 and went into full 750ml bottle production in January 2012.

Traubengeruch. Süß-säuerlicher Beginn, passende Traubennoten. Geringe Alkoholigkeit, mild säuerlich bleibend. Weinartig hell, gering herb, harmonisch. Intensiver Abgang, auch wegen des sich nun gut einbringenden Alkohols. 11/12/12/12/8/12

750ml bottle @ vPBF
Pours clear light yellow with a tiny head. Aroma of light fruity notes, some berries, hints of grapes and spices. Taste is fruity and spicy with notes of white wine, grapes, apples, yeast and earthy notes Finish is sweetish and spicy with white wine notes. A bit unbalanced, reminds me a lot more of a white wine than a beer.

75 cl bottle @ vPBF, bottled 2012
Quite pale appearance. Aroma feels like a pale lager with grainy malt and hints of butter. Also hints of yeast and citron. Flavour is rather tart and somewhat sour with very strong white wine notes and some sour apples. A disappointment.

Draught at The Old Toad Dogfish Head Fest 5. Very pale gold with no head. Nose of grape, must, dust. Think and dry, with flavors of grape, wine, apples, light hops. Like the mixture of a dry white wine with a dry cider. Nicely fruity. Enjoyable and unique.

Bottle: Poured a slightly hazy beige color ale with a rather large foamy head with good retention and some lacing. Aroma of rustic malt with light spicy yeast ester and some light dry grape notes light dry hoppy notes also distinguishable. Taste is a complex mix of rustic malt with dry hoppy notes with light dry grapes notes that are more subtle then I had expected. Body is quite full with good carbonation and no apparent alcohol. Very well brewed and hard to describe but very complex and still easily drinkable. I was almost expecting a mess of flavour based on the description but Dogfish were really able to create a very unique and interesting beer.

750 ml bottle into tulip glass, bottled in 2012B. Pours almost crystal clear golden straw color with a nice 1-2 finger white head with great retention, that reduces to a nice small cap that lasts. Some very nice soapy lacing clings to the glass, with a good amount of carbonation streaming up. Aromas of big grape, pear, lemon, grass, herbal, bread, floral, earth, clove, and light funkiness. Very nice and well balanced aromas with good complexity. Taste of big lemon, grape, pear, apple, herbal, floral, earth, bready grain, grass, funk, and light spiciness. Light tartness on the finish; with lingering notes of grape, lemon, tart apple, earth, herbal, bread, and light spiciness on the finish for a good bit. Fantastic complexity and balance of flavors; with a nice funky tartness in the background that compliments the flavor profile perfectly. Zero cloying sweetness. Medium carbonation and body; with a slightly slick and quite crisp mouthfeel that is very nice. No cloying sweetness at all. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is an absolutely outstanding experimental saison from Dogfish Head! Incredible balance of flavors with great complexity; and extremely smooth to drink. Really loved this one.
