Beret is as artistic as those who wear its namesake cap. Our brewers developed a silky, full-bodied wheat ale which we began fermenting with our house yeast strain. To finish the fermentation, we added our collection of barnyard bacteria, intended to slowly sour the ale, bringing out a slight funk and refreshing piquancy. Finally, a small dose of pureed raspberries were added for just a hint of fruity tannins, putting the berry in Beret.

Bottle, 9%. Slightly hay golden with big white head. Aroma is malt, fruit, brett, lemon, funk and raspberries. Flavour is malt, fruit, brett lemon, funk, raspberries, dry, tart, sour, little sweet, little over carbonated and wood.

750 mL bottle. Pours hazy yellow, with a big, bubbly head. The nose is lemon juice, cloves, grapefruit, and yogurt. Sweet and very tart flavor. Light to medium body, with a sharp, acidic feel. This is a well balanced and tasty sour, but the raspberries don’t come through hardly at all.

On tap at Hopcat A2. Pours a near clear golden orange with a white head that dissipates to the edges. Aroma has notes of tart raspberry, flora and Belgian yeast backed by sweet wheat and clove. Flavor has strong sweet and tart raspberry with sweet wheat, Belgian yeast and flora supporting.

0,75l bottle at a Party (about two weeks ago). Vintage 2015. Orange cloudy color, medium white head. smells of spices, tomatoes, light wood. ok smell. Full body, soft carbonation, slick mouthfeel. tastes of wood, sour, citric, nutty, marzipan, green apples, tomatoes, spices. fishes lightly sour and with some wood with notes of spices, tomatoes and herbal notes. rather heavy, overall pretty drinkable but expected a bit more.

Bottle @ MTG II tasting at Rich’s Welfare Pad. Pours hazed yellow with a white head. Aroma bears brisk brett funk. Taste is bretty sour funk with very mild raspberries. Decent but not outstanding.

750 ml bottle into tulip glass, bottled on 3/13/2016. Pours slightly hazy orange/amber color with a 1 finger dense off white head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big sour lemon, lime, raspberry, green apple, peach, pear, white wine, orange peel, coriander, peppercorn, oak, hay, straw, musty funk, leather, oak, light honey/vanilla, wheat, cracker, light vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, raspberry, oak, and moderate pale malt notes; with great strength. Taste of big sour lemon, lime, raspberry, green apple, peach, pear, white wine, orange peel, coriander, peppercorn, oak, hay, straw, musty funk, leather, oak, light honey, wheat, cracker, light vinegar, and yeast/oak earthiness. Moderate fruity/acidic sourness and light yeast/tannic oak spiciness on the finish; with lingering notes of lemon, lime, raspberry, green apple, peach, pear, white wine, orange peel, coriander, peppercorn, oak, hay, straw, musty funk, leather, oak, wheat, cracker, light vanilla, and yeast/oak earthiness on the finish for a while. Damn nice complexity, robustness, and balance of fruity/funky/acidic yeast, raspberry, oak, and moderate pale malt flavors; with a nice malt/sourness balance, and zero astringent flavors after the finish. Light-moderate dryness from acidity; increasing through the glass. Fairly puckering. Medium carbonation and medium-plus body; with a very smooth, acidic/tannic, and fairly creamy/grainy balanced mouthfeel that is great. Minimal warming alcohol for 8.6%. Overall this is an excellent fruited wild ale! All around great complexity, robustness, and balance of fruity/funky/acidic yeast, raspberry, oak, and moderate pale malt flavors; very smooth and easy to sip on for the ABV and moderate acidity. A very enjoyable offering.

Pours light gold into a snifter. Bright white head with excellent retention recedes to coat surface. Raspberry aromas. Sweet raspberry upfront turning to tart citrus and funk in the lasting finish.

Draft at the source on 6/26/2016. Hazy golden with a white head. Aroma is fruity, funky, white wine. Taste is tart, raspberry, dark berries, funk, white wine, wheat, and wood. Nice.
