Naissance et renaissance ! Brassée pour la première fois en 2001, sans imaginer à l’avance ce qu’elle serait, elle ne fut pas au goût de son brasseur. Changement de la recette et des ingrédients, rien n’y fit : elle ne lui plaisait toujours pas. Elle faillit être abandonnée… L’idée de la rendre plus stout que brune et plus sèche que ronde, a fait qu’elle est aujourd’hui sa préférée.

Draught @ Van Moll Brewpub. Dark red-brown color, full sized slightly creamy beige head that lasts for a decent while. Smell malts, dark malts, roasted malts, lightly smoke. Taste malts, lightly roasty, some hops surprisingly, some yeast, a subtle sweetness. Medium body, medium carbonation. Quite nice.

Stor flaska från SB. Mörk belgisk ale, enligt etiketten en Stout de Gaume. Skum kryper långsamt upp ur halsen då kapsylen kommit av. Smutsbrun lätt disig vätska med fingerhögt krämig skum (tänk Kilkenny). Fin doft med kryddor, apelsin, päron, brunt socker och belgisk jäst. Förhållande vis torr, len munkänsla, bra balans mellan fruktighet, kryddighet, rostad malt och örtig beska. Krispig och mjuk, lätt och med rund fylliga smaker. Mycket trevlig och bra sällskap till en mustig köttgryta en kall vinterdag. Mycket trevlig.

Bottle. Light hazy brown liquid with medium to big off-white head. Aroma of bread, raw sugar, bubblegum, dried fruit, licorice and toast. Taste is light sweet and light bitter with notes of dried fruit, toast, bubblegum and light wine. Medium bodied with medium carbonation. Ok.

750 ml bottle into chalice, best before June 2015. Pours very hazy deep reddish brown color with a 1 finger dense and fluffy khaki head with good retention, that reduces to a thin cap that lingers. Spotty soapy lacing clings down the glass, with some moderate streaming carbonation. Aromas of big chocolate, toast, caramel, pear, apple, raisin, brown bread, pepper, clove, brown sugar, toffee, floral, and yeast earthiness. Damn nice aromas with good balance and complexity of malt and fruity/spicy yeast notes; with good strength. Taste of chocolate, caramel, toast, pear, apple, raisin, clove, pepper, brown bread, floral, brown sugar, toffee, and yeast earthiness. Lingering notes of chocolate, caramel, toast, brown bread, clove, pepper, pear, apple, raisin, floral, brown sugar, and yeast earthiness on the finish for a good bit. Damn nice balance and complexity of malt and fruity/spicy yeast flavors; with an awesome malt/spicy flavor balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a very smooth and crisp mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is an excellent Belgian brown ale. All around great balance and complexity of malt and fruity/spicy yeast flavors; and very smooth and crisp to drink. A very enjoyable offering.

From a 750ml bottle on 30/5/2013. Pours a very dark brown with a biggish head which disappears quickly. Has a light aroma of dark, stewed fruit. Flavour wise, it’s more dark, stewed fruit and some dried fruit (particularly prunes), with that typical Belgian yeastiness. Finishes with a modest bitterness with some slight roasty notes. The carbonation is medium and the palate a little thin. All up, this is eminently drinkable but nothing special.

Bottle. Creamy off-white good mostly lasting head. Amber colour. Moderate malty and light hoppy and moderate yeasty aroma. Nice moderate bitter flavor. Some fruity notes and caramel. Nice balance. Average moderate bitter finish. Creamy palate.
