Farmhouse Ale Brewed with Lemons & Limes – Dry, well-attenuated, farmhouse ale brewed with the zest and juice of lemons and limes.

We are pleased to introduce Jester King Provenance — a series of three farmhouse ales brewed with different combinations of winter citrus fruit. The first of the three batches was brewed with the zest and juice of grapefruits and oranges. The second batch incorporated the zest and juice of lemons and limes, and the third batch used the zest and juice of tangerines and clementines.

All three variations are dry, highly-attenuated, authentic farmhouse ales, brewed with Hill Country well water, malted barley, malted wheat, hops, and fermented with a unique blend of brewer’s yeast, native wild yeast, and native souring bacteria. Their flavors are yeast and souring bacteria driven with the fruits serving as integral components of the fermentation. We don’t add fruit (or fruit flavorings or concentrates for that matter) to filtered and pasteurized beer at packaging time to make what amounts to a beer cooler. Rather, we incorporate the fruit into the fermentation, so that wild yeast and souring bacteria can transform the fruit flavors into something that’s greater than the sum of the parts. For instance, think about the difference between grape juice and wine. Why are the two so different from one another? It’s because the grape juice has been fermented by living microorganisms. We apply the same principle to the use of fruit in our beer.

On tap @Luppolo Station (Rome). Gialla torbida, schiuma bianca media, molto persistente. Al naso note di bergamotto, citronella, scorza di limone, spezie. In bocca è citrica, appena acida e tart, rinfrescante. Corpo medio, carbonazione media. Buona.

Bottle from Beergonzo.co.uk. Hazy golden with a white head. Aroma is sweet, malty, citrus and herbal. Flavor is medium sweet and moderate bitter. Dry and moderate bitter finish. A bit fizzy. 261218

Toranomon summer tasting, thank you Walter for this! Straw creamy pour with some white foam, leaving good lacings. Lots of lime in the nose, mint and other herbs. Tastes herbal, reallky lots of lime and lemony citrus. Good terroir feel, somewhat wild, a bit of farmhouse. Well balanced and nothing is really dominating although lime is shining. Dry biter citrus peel bitterness in the finish, dry, a bit harsh and lingering. Good stuff.

Slightly tart nose with funky lemon and lime nose, very clean nose with some light oak. Nice sourness with the acidicity from lime punching through. Low carbonation. Nice lime and lemon finish. Good stuff.

Bottle at Craig's. Pours hazy yellow gold with a thin white head. Aromas of light funk and citrus. Taste is dry, thin, funky, citrus.

[ As Jester King Provenance (Lemon & Lime) ].Unclear - hazy matt medium yellow colour with a small to average, frothy - fizzy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, wheat, lemon, lime, moderate to light heavy yeasty, saison yeast, fruity, citrus. Flavor is moderate sweet and bitter with a long duration, tart, citrus - lemon, dry, zesty, saison yeast, lemon - lime. Body is medium, texture is oily to watery, carbonation is soft.
