Farmhouse Ale Brewed with Lemons & Limes – Dry, well-attenuated, farmhouse ale brewed with the zest and juice of lemons and limes.
We are pleased to introduce Jester King Provenance — a series of three farmhouse ales brewed with different combinations of winter citrus fruit. The first of the three batches was brewed with the zest and juice of grapefruits and oranges. The second batch incorporated the zest and juice of lemons and limes, and the third batch used the zest and juice of tangerines and clementines.
All three variations are dry, highly-attenuated, authentic farmhouse ales, brewed with Hill Country well water, malted barley, malted wheat, hops, and fermented with a unique blend of brewer’s yeast, native wild yeast, and native souring bacteria. Their flavors are yeast and souring bacteria driven with the fruits serving as integral components of the fermentation. We don’t add fruit (or fruit flavorings or concentrates for that matter) to filtered and pasteurized beer at packaging time to make what amounts to a beer cooler. Rather, we incorporate the fruit into the fermentation, so that wild yeast and souring bacteria can transform the fruit flavors into something that’s greater than the sum of the parts. For instance, think about the difference between grape juice and wine. Why are the two so different from one another? It’s because the grape juice has been fermented by living microorganisms. We apply the same principle to the use of fruit in our beer.

Pours a hazy light straw from a bottle. Lemongrass aroma, wheaty. Flavor is somewhat like SweeTarts or something. Okay beer.

And so it came to pass that six like minded people met on the 20th day of November in the year of 2016: those six people shared twenty five fine beers. This is one of those twenty five. 75cl bottle. Pale yellow, misty; white head. As the name suggests, this has an aroma and taste of both lemons and limes. Semi-sour, but overly so.

Bottle @ Rich’s 7k tasting. Pours misty straw yellow, good pure white head. Big lemon and lime / ginger beer aroma. Taste is vibrant lemon and lime, ginger with a bristling zesty character. Excellent, super refreshing stuff.

On tap at Jester King. Pours a hazy gold with small white head that lasts. The aroma is lemon lime sprite and floral. Thin body, lime zest, funk, straw, nice tartness, very nice.

Bottle split at Kenny 20K, thanks to Matteo, 15/01/16. Hazed orange with a decent off white cap. Nose is pissy citrics, lime, lemon, straw, sharp tangerine, light menthol notes. Taste comprises harsh citric shreds, lemon rind, lime jus, straw, funk, herbal, light peppery spice. Medium bodied, fine carbonation, semi drying close. Ok but far from the best offering I’ve had from JK.

750 ml bottle. Slightly full citrus nose, lemon, lime come through all the hay and funk. Tart and more acidic than the orange-grapefruit, less phenolic tasting as well, although it seems that is the fruit masking it. Dry and grassy, a bit less funky and more drinkable than the other.

Bottle shared at the Kenny 20K mega monster tasting. 15/01/2016. Many thanks to Matteo for this one. Cloudy yellow straw coloured pour with a lasting thin white head .. Aroma is tangy wheat, lemon, lime, pithy, perfume. Flavour is composed of light saison yeast, lemon and lime, wheat, doughy grains, lime and citrus. Palate is tangy, pithy lemon. Palate is highish carbonation. Decent.
