Imperial Porter brewed with honey and aged in bourbon barrels
This was an exciting collaborative brew with our dear friends at To Øl Brewery based in Denmark. A rich and robust imperial porter served as the canvas for over 120 gallons local wildflower honey. After resting in bourbon barrels for over a year, this beer drinks like a sweet digestif with notes of honey, oak, baker’s chocolate, and bourbon barrel.

Bottle, 0.375l. Aroma of honey, bourbon, oak, vanilla, chocolate and chestnut. Pours dark brown color with thin quickly diminishing light brown head. Taste starts with sweet honey and chocolate, follows by roasted malt, nuts, dried fruit and licorice, mouthfeel is warm and spicy, while finish is floral and slightly herbal. Full body, thick syrupy texture and soft carbonation in palate. So good that will certainly leave a mark in (at least my) beer history...

15 December 2018. Black Beer Fest, Ieper. Cheers to Anke, Erwin & Ama Deke! Hazy black with a small, unstable, frothy, tan head. Intense aroma of apple, calvados, vanilla, wood, burnt caramel, candied plum & orange, dough, honey & syrup, bourbon. Taste is medium to heavy malty sweet, lots of honey, syrup, apple & creamy vanilla, sweet in an uncompromising kind of way; only countered by a light roasted bitterness with nuts, fondant, faint mocha, woody touch. Dryish, herbal hoppy finish, lingering syrup, 'woody vanilla', on the verge of cloying, warming bourbon alcohol. Medium to full body, oily texture, soft carbonation. Probably too sweet for some people, I can easily enjoy this.
