Captured by a local fisherman, Cassandra the Mermaid cursed Damme. She was banished to a pond right beside the brewery where she died of despair. She lives on today as the city weather vane.

Cassandra's bitterness derives from both its coffee-like roasted grains as well as its earthy European hop bill and a subtle touch of minerality through the addition of oyster shells at the end of the boiling process brings out a perceived chocolatey-liquorice sweetness.

Bottle from Rotsaert, Zedelgem, Belgium. A black coloured pour with a thin beige head on top. Rich, malty, chocolate, coffee aroma and taste. Slightly bitter, didn't detect oysters in there, good quality stout from Siphon.

Flaska från Etre Gourmete. Svart opak vätska med lågt beige skum. Rostade aromer av kaffe, mörkt bröd, choklad. Rund munkänsla, stor kropp, medelstor sötma med fudge och choklad, men också torrare, kärvare ganska hårt rostade smaker med medelstor beska. Bra balans. Gott.

Bottle at home from Malt Attacks, Brussels, 9th February 2020. Pours black. Aroma is ashy and roasted malts. Taste is ash, chocolate, roasted malts and liquorice. Really smooth a great stout.

many thanks for this Oyster Stout to Dariusz Sokol. Piwo ma spora trwala ciemno bezowa gesta piane, barwa ciemna czarno-brazowa nie przepuszczajaca nawet najjasrawszego swiatla. Pachnie powietrzem morskim, w smaku kawa, czaekolada bardzo gozka i twarda, nieco mineralnosci, wolkanicznej soli. Bardzo pyszne i wytrawne, goryczka wyczuwalna mozno. Profil zdecydowanie dla wytrawnych smakoszy. Pairing with Kromik Cheese (Kromerizsky Svatecni Syr).

Dark brown to black colored, medium- beige to tan head. Strong chocolate and dark malty aromas, roasted and coffee notes, medium roasty bitterness, dryish finish, some spicy yeast. Medium bodied, soft carbonation, oily.

Pitch black, tall creamy tan head, good retention, heavy lacing. Aroma roasted malt, cocoa, black coffee. Taste medium sweet and bitter, roasted malts, dark chocolate, liquorice, coffee. Roasty sweetbitter aftertaste, liquorice, earthy notes. Medium body, oily texture, soft carbonation, rich and well-balanced, very good.
