Noble King is one of our earliest beers, and one of the best representations of our brewing philosophy. It features an abundance of organic Perle and Fuggle hops from The Oregon Hophouse, which are known for earthy, spicy, herbal flavors and aromas.
We like to release Noble King when it’s fairly young after about three weeks of bottle/keg conditioning. At this age, the hops are bright, fresh, and prominent. As time goes on, fermentation will slowly continue to progress, the fresh hop character will fade, and some of the funky aroma from mixed fermentation will become more evident. There’s no wrong answer as far as when to drink. We like Noble King both fresh and with some age on it.
While not a secret, we’ve never mentioned where Noble King got its name. “Noble King” was inspired as a counterpart to “Alpha King”. Not the beer from Three Floyds per se, but the notion of high-alpha acid, hop-driven beers. Since it’s a low-alpha acid, Noble (or Noble-esque) hop-driven beer, the name “Noble King” felt right.
Brewed with well water from the Trinity Aquifer, Texas malted barley and wheat from TexMalt, and Perle and Fuggle hops. Fermented in stainless steel with Jester King mixed culture. Dry hopped with more Perle and Fuggle. Naturally conditioned through refermentation in the bottle/keg.

Batch 21 - Feb 2018, Slightly fruity, slightly dry, slight hoppy. Great mix of flavors and texture. Nose is 100% dry funk but upfront is a great fruitiness + tart notes and ends with a hoppy base. Really like this, surprised at it's general rating.

Bottle sample at a tasting at Shapiro brewery. Thanks Ory. Clear yellow. Funk, barnyard, earth, flowers, hops, spiciness, cobwebs, dry, moderately bitter. Very nice.

Bottle pour at State of Origin. Pours a clearish gold with a full 2 fingers of foam. Peppery aromas with floral, grassy hops and crisp grain aromas. Some lemon, pepper and leafy hops on the palate. Crisp, clean and good pils malt character. Fairly dry with some woody funk. Lingering peppery bitterness and leafy character with some faint estery fruit notes. Great stuff.

Sample from Batch #12 during the "Micah's Downstairs Reopening" tasting on 03/02/2018. This brew is a hazy straw color with a medium thin white head that evaporates quickly to a wispy film. Short strings of lace. Aroma of citrus, funky yeast and malt. Light to medium body with flavors of funky lemon, yeast, wood, malt and mild hops. The finish is brett yeast and citrusy hops. Pretty good overall.

Lime, some florals and some hops like a romp through the daisy field. Comes together ok. Pours hazy golden with ok head and lacing. Tap at Snally.

Very light amber golden color. Very hoppy light fruity nose with tons of Brett. Dry super fruity and bretty, but not overly bitter. Super quaffable.

Draft pour at the Masonry as part of their SBW event. Pours a still yellow color with a rocky white foam head. Lemon, grassy aroma. Flavor is a wet citrus, lemon up front, but not too tart. Floral, yeast steady. Soft fruit with a late spice hint. Drinks easy. Intriguing bite to it, and hop content is noticeable. Has a watery side to it, that knocked this down to just great.
