Noble King is one of our earliest beers, and one of the best representations of our brewing philosophy. It features an abundance of organic Perle and Fuggle hops from The Oregon Hophouse, which are known for earthy, spicy, herbal flavors and aromas.

We like to release Noble King when it’s fairly young after about three weeks of bottle/keg conditioning. At this age, the hops are bright, fresh, and prominent. As time goes on, fermentation will slowly continue to progress, the fresh hop character will fade, and some of the funky aroma from mixed fermentation will become more evident. There’s no wrong answer as far as when to drink. We like Noble King both fresh and with some age on it.

While not a secret, we’ve never mentioned where Noble King got its name. “Noble King” was inspired as a counterpart to “Alpha King”. Not the beer from Three Floyds per se, but the notion of high-alpha acid, hop-driven beers. Since it’s a low-alpha acid, Noble (or Noble-esque) hop-driven beer, the name “Noble King” felt right.

Brewed with well water from the Trinity Aquifer, Texas malted barley and wheat from TexMalt, and Perle and Fuggle hops. Fermented in stainless steel with Jester King mixed culture. Dry hopped with more Perle and Fuggle. Naturally conditioned through refermentation in the bottle/keg.

Bottle from Whole Foods - Lamar. Batch #17 04.01.2015. Pours out pale cloudy golden color with huge airy head. Spots of sediment for the white head. Yeasty, funky tartness in both aroma and taste. Not sure if it’s the age or not, but coming off sour, not too bad, but more tart than your normal farmhouse ale. But it’s Jester King...more yeasty funk on the finish.

A loght yellow beer with a thin white head. The aroma has notes of lemons, brettanomyces, and straw. The flavor is sweet with notes of lemons, brettanomyces, wood, and straw leading to a tart finish.

Bottle. Gold with an inch of white head that never disappears. Aroma of Seville oranges, nectarines, lemon blossoms and syllabub. Austere and some sweeter citrus than expected. Lovely - powerful but not shouty. Under-ripe nectarines.Maybe slightly sour. Funk is mild. Grainy, slightly doughy. Could dry out more at the fairly bitter finish. This is "wild" rather than a saison because they didn’t get the yeast in the post? Second glass is slightly cloudy and there’s a bit of the lassi-like softness to the palate that’s similar to what I really liked in their table beer.

100ml sample. Murky pale straw. The aroma starts with some... mushrooms? Then goes sweet-and-tart orchard fruit. Taste: Lambic-like acidity with a moderately bitter finish that feels inappropriate.

750 ml. bottle split with Kraddel @ Rampkrot. Batch 15. Bottled on 16/07/2014. HUGE GUSHER – sadly. Hazy citrus, collapsing bubbles. Nose is lemon, almost cider-like funk, mellow funk, green apple, touch soy yoghurt, mellow, fruity, very light tartness. Taste is green apple, barnyard, very mellow, almost rustic cider-like, light soap, touch light fruity hops, light funk, straw,… Drinks like water. Perfect super-easy rustic farmhouse beer. I love it. Go Jester King, go. Too bad about the gushing ‘though.

b15 . Pours unclear yellow, with a small white head , after gushing all over my poor bar ... Smell is slightly sour, funky, bit dry, with a sweetness to it as well ( from the malts ) . Taste is sharp sour, but a honey undertone . rather plain , but still good .

750 ml bottle. Bright pastel yellow color, hazy, medium fine lace. Grapefruit, lemon, yogurt, minerals, zest in the nose. Creamy lemon flavor with nice level of funk and hoppiness. Much more of a real beer than Le Petit Prince, though it seems to be basically the same recipe. Lovely.

Bottle thanks to Mora2000 drank during Pats v Colts game. Pours hazy yellow with lovely white sudsy head. Nose is funky tart fruits. Tastes of tangerines, grapefruit, cantaloupe, grass, hay, earthy bitters, and florals. Lively palate. Great one really lifted my spirits from being sick as a dog for parts of the weekend.
