Noble King is one of our earliest beers, and one of the best representations of our brewing philosophy. It features an abundance of organic Perle and Fuggle hops from The Oregon Hophouse, which are known for earthy, spicy, herbal flavors and aromas.

We like to release Noble King when it’s fairly young after about three weeks of bottle/keg conditioning. At this age, the hops are bright, fresh, and prominent. As time goes on, fermentation will slowly continue to progress, the fresh hop character will fade, and some of the funky aroma from mixed fermentation will become more evident. There’s no wrong answer as far as when to drink. We like Noble King both fresh and with some age on it.

While not a secret, we’ve never mentioned where Noble King got its name. “Noble King” was inspired as a counterpart to “Alpha King”. Not the beer from Three Floyds per se, but the notion of high-alpha acid, hop-driven beers. Since it’s a low-alpha acid, Noble (or Noble-esque) hop-driven beer, the name “Noble King” felt right.

Brewed with well water from the Trinity Aquifer, Texas malted barley and wheat from TexMalt, and Perle and Fuggle hops. Fermented in stainless steel with Jester King mixed culture. Dry hopped with more Perle and Fuggle. Naturally conditioned through refermentation in the bottle/keg.

Bottled in htown. Pou re d a cloudy yellow. A yeasty funk with a hoppy bite. Pretty nice stuff.

Can pour from The Beer Store, Salem. Hazy bright yellow with nice white head with good retention and no lacing. Aroma is lightly tart/funky fruit, citrus. Taste is strong funk, light tart fruit. Smooth, frothy texture, average carbonation and finish as taste. Not overly tart--more funky. Well made.

16 oz can shared by tfontana, thank u Tom! Aroma shows lemons, herb, soft funk. Flavor follows with soft funk, mild yeast, and bold lemon and acid. Nicely refreshing yet tart!

750 ml. Aroma is funky, notes of lemon, light bread. Pours hazy golden with an off white head with decent retention. Taste is lightly tart and funky. Quality.

750mL bottled Sep 2021, Batch #25, drunk 7/31/22. Clear, light copper-to-brass-golden. Large, snow white head shows good retention. Heavily floral-perfumey but with lots of Brett and a solid helping of noble hops. Malts are sparse with cracker and such leading to plentiful tart acidity on the finish. Clean and with just a touch of lactic and acetic acid. Initially heavily perfume-forward with lightly astringent bitterness leading to lactic and acetic acid. It definitely softens as it warms and breathes, but it never becomes fully easygoing/mild. Just a bit too much acidity from bacteria, yeast and hop over the course of the glass. Malt depth is fine, though it's bone dry, which doesn't help with the heavy acidity/bitterness. Lingering perfume, flowers and hop bitterness with tart brett.

Bottle pour at St Gambrinus. Pours clear orange gold. Herbal, floral, solid malt, little biscuit, little toffee, pear, almond, light dill. Medium body. Decent.

Keg
Hazy to cloudy golden blond colour, medium sized head. Nice aroma, funky yeast and fragrant bread. Dry but with good body structure; strong yeast character, Brett, some funk, candied orange, and mild astringency to complete the picture.

Keg at CW Family & Friends, Session 2 @Manchester Central, 22/02/20. Hazed golden yellow with a decent off white cap. Nose is funk, damp straw, green berry piss, wood must. Taste comprises stoned fruits, green berry skins, hay bale, citric tinged straw, grains, barnyard twang. Medium bodied, fine carbonation, semi drying close with light balanced acidity. Decent easy drinker.
