Noble King is one of our earliest beers, and one of the best representations of our brewing philosophy. It features an abundance of organic Perle and Fuggle hops from The Oregon Hophouse, which are known for earthy, spicy, herbal flavors and aromas.
We like to release Noble King when it’s fairly young after about three weeks of bottle/keg conditioning. At this age, the hops are bright, fresh, and prominent. As time goes on, fermentation will slowly continue to progress, the fresh hop character will fade, and some of the funky aroma from mixed fermentation will become more evident. There’s no wrong answer as far as when to drink. We like Noble King both fresh and with some age on it.
While not a secret, we’ve never mentioned where Noble King got its name. “Noble King” was inspired as a counterpart to “Alpha King”. Not the beer from Three Floyds per se, but the notion of high-alpha acid, hop-driven beers. Since it’s a low-alpha acid, Noble (or Noble-esque) hop-driven beer, the name “Noble King” felt right.
Brewed with well water from the Trinity Aquifer, Texas malted barley and wheat from TexMalt, and Perle and Fuggle hops. Fermented in stainless steel with Jester King mixed culture. Dry hopped with more Perle and Fuggle. Naturally conditioned through refermentation in the bottle/keg.

Pale blond with light haze. Aroma is very floral. Sweet gale?. Flavour is way better. Tart and fresh with light acidity

Enjoyed at Mikkeller Baghaven Wild Ale Celebration 2020, at Refshaleøen, Copenhagen. Mild funky with phenolic notes of burned plastic.

Pale and a bit hazy. Thin head. Only the nose it’s got brett C, some other brett, a fair bit of pale malt base beer. Soft and sweet, nice fruity complexity, maybe a bit of autolysis in the finish that sort of buggers up what is otherwise a really refined beer.

Cloudy gold with a decent white head. Light grains and soft funk. Touch of funk and a clear clean finish. Nice and refreshing.

Taster on Weathered. Appearance: hazy golden with a white head. Aroma: fruity, some honey and flowery notes, some slight notes Belgian Saison. Taste: along the same lines, fruity and flowery, but in an odd way. Overall: it has body, but in general it's not really enjoyable for me.

Batch 23 at Gourmet Haus in Redwood City. Honeycomb with retained, moderate white head. Lemon pledge, great funk. Flavors are lemon and slight spicy esters.

Bottle. A- Spices. A- Gold color, cloudy liquid, white head. T- Spice, barnyard, lemon. P- Medium body average texture, average carbonation, balanced finish. O- Lots of white pepper and generic spice on the nose. Some barnyard funk that balanced everything out with a bit of citrus zest. One of the biggets rocky heads I've seen. More saison than sour.

Batch 21 - Feb 2018, Slightly fruity, slightly dry, slight hoppy. Great mix of flavors and texture. Nose is 100% dry funk but upfront is a great fruitiness + tart notes and ends with a hoppy base. Really like this, surprised at it's general rating.
