Omniscience & Proselytism holds a special place for us for a couple of reasons. First, we’re lucky to be down the road from one of the best strawberry-producing places in the country — Poteet, Texas. When we’re this close to fruit this good, our job is not to mess it up. Second, strawberry re-fermentation with barrel-aged wild beer can be notoriously finicky. Our simple, traditional re-fermentation technique just seems to work out well year over year. The uniqueness of the fruit, coupled with the success of our approach, makes this one pretty special for us.

From notes scribbled at MBCT. 5% Opaque, copper golden in color with lots of fruits. Good stuff. 3.8-9

500ml bottle at Kump’s during the Pink session. Pours a hazy golden with a white head. Aroma is a bit woody with strawberries and some spices. Similar taste. Very dry.

Draft. A- Strawberry, sour, mild oak, vinous, funky. A- Orange color, clear liquid, white head. T- Sweet, strawberry, funky, rubber, barnyard, straw. P- Light body, average texture, average carbonation, funky finish. O- Delicious stuff right here. A big strawberry nose and taste. The strawberry is so natural and while it's the main star it doesn't overpower the beer. Really refreshing with a balance between fruit and funk. There is that signature horse blanket and manure aroma but it's not offensive, it's delicious. I really regret not buying a bottle of this to take home, but at $25 for 17 oz. that's a steep price. Worth it at least once on tap though.

From backlog. Draught @ Mikkeller Baghaven. Slightly tart and oaky with some sourness, sweetish strawberry notes and hints of funky yeastiness.

Bottle thanks to Jeff. Pours a reddish golden hue. A big burst of woody strawberries. Lovely berry flavor, oak, sweet strawberry, tart notes, vinous, brett and funk in the end. Very good, at the core a lovely sour berry flavor.

Bottle at share. Medium golden with a pinkish hue, small airy head. Gentle fruity aroma, some of the tartness comes through. Tartness is sublime, as is the sweetness. Flies under the radar. Tastes fantastic.

Bottle. Pours a hazy orange color with a small white head. Has a fruity sour strawberry aroma. Fruity sour tart strawberry flavor. Has a fruity sour tart strawberry finish.

Tap@Beavertown Extravaganza 2017, London - golden orange pour with off white head. Tart fruity with strawberry prominence, red berry fruity support, light funky and yeasty touch, medium body, tart strawberry fruity finish.
