Omniscience & Proselytism holds a special place for us for a couple of reasons. First, we’re lucky to be down the road from one of the best strawberry-producing places in the country — Poteet, Texas. When we’re this close to fruit this good, our job is not to mess it up. Second, strawberry re-fermentation with barrel-aged wild beer can be notoriously finicky. Our simple, traditional re-fermentation technique just seems to work out well year over year. The uniqueness of the fruit, coupled with the success of our approach, makes this one pretty special for us.

On tap at at Beavertown Extravaganza 2017. Pours cloudy orange, off-white head. Nice, strawberries all around, funk, some vanilla, citric, bit lactic, moderate to heavy sourness. Medium bodied.

Tap. Hazy golden color with no head. Aroma is milky, orange juice, strawberry. Taste is strawberry, yoghurt, tannic, barrel funk. Low carbonation, a bit watery mouthfeel.

Tap at beavertown extravaganza. Nose is orange, mandarin, apricot, Peach. Palate is mandarin, orange, nectarines, grapefruit, Joghurt finish. Well done.

Keg at beaverfest. Pours clear orange, nose is strawberry, funk, toffee, taste is tart, juicy, fruity, oak.

Bottle 500ml. @ Himmeriget, Aaboulevard 27, Copenhagen, Denmark 1960. [ As Jester King Omniscience & Proselytism ].ABV: 5.5%. Light unclear medium orange colour with a small average, frothy - fizzy, good lacing, mostly lasting to diminishing, off-white head. Aroma is moderate malty, pale malt, strawberry, tart, sour, yeast. Flavor is moderate to heavy sweet and light to moderate acidic with a long duration, tart, strawberry, sour, yeast, citric. Body is medium, texture is oily to watery, carbonation is soft. Bottle @ Himmeriget. Clear amber with small off-white head. Arom ais malt, baking yeast, caramel, strawberries, herbs and lemon. Flavour is malt, fruit, strawberries , caramel, herbs, lemon, sour and citric.
