The Binchoise XO is a unique beer that never ceases to seduce the amateurs of always or newly conquered by this true testimony of the passion and the know-how of our Master-Brewer, Bruno De Ghorain. It is served as an aperitif, at the time of the cheese (it accompanies marvellously the blue cheeses) and at the time of the dessert where it will sublimate your so chocolate.

Sampled at OBER Kerstbierfestival Essen 2011. Hazy, almost opaque yellow / orange color, small white head. Smell sweetness, slightly wood. Taste sweet, flowers or blossom, wood and some resin. Alcohol very well hidden, it does not taste as 12% ABV at all! Medium carbonation, medium body.

15cl bottle sample @ Kerstbierfestival ’11, Essen. Un bon bout de temps que je voulais la goûter. Quelle belle surprise, le tout dans une très belle présentation. Orangée, col blanc fin. Arôme malté caramel avec un bouquet fruité très présent, grains et céréale, sorte de pomme caramélisé et raisins blanc. En bouche, fruit est bien en avant, poire/pomme et raisin vers une touche de réglisse, le tout restant sec et avec une pointe sucrée et de boisé avec cette sensation de fraîcheur qui se dégage en bouche et est tout simplement très appréciable. Alcool est très agréable et reste discret, garde un profile belge dans les houblons et les malts.

Small head, fast gone over hazy orange-amber beer. Complex nose with wood, alcohol, fusels: estery and a touch of solvent. Liqueur/aged spiritcharacter and aromas of alcohol-preserved fruit (peach, apricot,...), cacao powder. Bitterish, even fainter sweetish, fruity/estery, lots of liquorice. Plum- or apricotbrandy. Spiritbite; seems only medium bodied, but viscosity, slickness relate a different story. Excellent. Very glad to find La Binchoise joining the experimenting stream of brewers - and it’s by far their best @ time of recording!
