Tart Grisette w/ Plums & Lemon Balm
We met the Ology boys at the Craft Brewers Conference and hit it off immediately. They make innovative beer styles in Tallahassee, FL. We were fortunate enough to be able to host them at our brewery in August for this collab, and we put them to work right away due to a rouge shipment of plums that showed up the night before they arrived! We ultimately decided to incorporate the fruit that they labored over.

Bottle. Pours a clear dull orange gold with a white head that dissipates to the edges. Aroma has light lemon and slightly tart plum with a bit of flora and oak supporting. Flavor has a slightly tart plum and a bit of lemon with some sweet grains and a touch of oak.

Bottle from Holiday Market. Pours a clearish rose color with a small bit of off-white foam that dissipates. Plum skin and flesh on the nose with light wild strawberry and grainy aromas. Plum on the palate with lemon that comes on mid-palate with a mild tartness. The plum is not overbearing and used in a very balanced way. Quick, refreshing finish that leaves you wanting your next taste immediately. Paired well with an oil based spaghetti with mushroom and arugula and a salad.
