Midnight Still - Un-oaked

Draft at Pine Box in Seattle for the Holy Mountain debut event. 6oz poured into a 12oz tulip-globe glass. Black beer, not much on head and lacing. Its a nice, well attenuated beer. There is a bit of acidity on the nose but not so much on palate. Roasted flavors, light prune, but not too strong on anything. Lower hop level, which I highly support. A nice sweet but unsugary finish to the beer. Even a faint fruit/ester character at the end. The finish is my favorite part of the beer. I would love to see future iterations of this imperial stout, its got so many positive going for it and none of the trappings of many new big impy stouts. I also wonder if its a British yeast being used. Either way, I would rather try the next batch of the un-oaked version rather than another barrel aged, adjunct-added imperial stout.
