Beer is typically fermented in a very calculated, controlled manner with pure strains of brewers’ yeast. Our award winning lambic beer is instead fermented by exposing it to the untamed yeasts and bacteria that are native to our Brewery. We affectionately call this unrestrained, wild amalgamation our House Funk. This blend is unique to Rivertown and this unusual, spontaneous process, involving over a year of fermentation in oak wine barrels, is what gives this beer its distinctive flavor; dry, funky, vinous, and cidery, with a crisp, sour aftertaste that will continue to develop in the bottle for years to come.

Bottle. Hazy golden liquid with small to medium white head. Aroma of lemon, sugar, barnyard, apples, vanilla, wood and bread. Taste is dry and light to medium sour with notes of lemon, barnyard and vanilla. Medium bodied with medium carbonation. Ok.

Bottle. Pours a hazy yellow golden color with a small white head. Has a fruity sour tart weak funky woody aroma. Fruity malty sour tart funky flavor. Has a fruity malty sour tart weak funky citrus finish.

Shared by NobleSquirrel, 750ml bottle poured into a small La Chouffe glass. Headless dull golden pour, can’t see throught it. Aroma is a medium acetic with lemon and sweet sour. Flavor has some vinegar with a nail polish twist. Fruity vinegar American sour but not too bad or over the top, just some rough edges.

Sample from 75 cl. bottle, 2011 Vintage. Slightly hazy, deeper golden colour with a small, white head. Tart aroma with yeasts, fruits, green grapes and oak. Taste is sour. Medium body with an average carbonation. Finishes tart and dry with a hint of citrus. Nice US-Lambic.

Bottle 75 cl. Pours an almost clear golden with a smallish white head. Tart, Bretty nose. Medium body, dry and fruity with a salty touch. A little baking yeast. Tart and dry. Not as complex as the belgian examples - naturally - but quite decent. 130913

750 ml bottle into tulip glass, 2011 vintage. Pours lightly hazy bright golden straw color with a 2 finger fairly dense white head with good retention, that reduces to a thin lace that lingers. Minimal spotty lacing clings on the glass. Aromas of big tart apple, lemon, pear, grape, clove, oak, hay, grass, vinegar, white wine, funk, leather, and yeast earthiness. Awesome aromas with great balance and complexity of yeast and oak barrel notes; with good strength. Taste of tart apple, lemon, pear, grape, clove, oak, hay, grass, pepper, white vinegar, funk, white wine, leather, and yeast earthiness. Fair amount of acidic tartness on the finish; with lingering notes of light fruits, clove, oak, hay, vinegar, grass, white wine, leather, funk, and yeast earthiness on the finish for a good bit. Very nice complexity and balance of fruity/spicy/funky yeast flavors with moderate barrel presence; with a great malt/tartness balance and zero cloying flavors after the finish. Medium carbonation and body; with a smooth, crisp, and moderately acidic mouthfeel that is nice. Alcohol is very well hidden with minimal warming noticed after the finish. Overall this is a highly excellent Lambic style! All around great balance and complexity of yeast and barrel flavors; and very smooth and crisp to drink with the moderate acidity. A highly enjoyable offering.

Bottle via trade, shared at the "Ken says its not sour enough" tasting! It pours hazy gold with a quickly dissipating white head. The nose is mellow, hay, floral, wood, faint must and soft fruit. The taste is lightly tart lemon, earth, hay, floral, sherbet, tart apricot/peach, pomello and mild acidity with a dry, clean finish. Light-medium body, fine carbonation and velvety mouth-feel. Smooth, well balanced and rather drinkable stuff!

Craft Clerkenwell Tasting. Thanks to Paul. Hazy gold beer, little off white head. Very light and semi dry palate. Super light sourness. Touch of dried fruits. Dry finish. Fine but (and I can barely believe I’m saying this) could be more sour!
