Rustique started life as a ‘clean’ strong Belgian style pale ale. After a primary fermentation we transferred it to Foudre No. 4, that had previously held different mixed fermentation beers.

The residual wild yeasts worked their magic over 15 months to produce a unique wild pale ale.

Golden color. The nose shows very interesting complexity with French oak, caramel, crepes and a touch of toffee funky yeasty nose. Mildly tart, funky fairly bitter, dry so well balanced. Great depth. Didn’t realize this is 8.5%. Drinks much easier than 8.5%

Keg at IMBC '19, session 2, 04/10/19. Lightly hazed orange with a decent off white cap that dissipates edgeward. Nose is wood must, tangy citric rinds, funk, damp wood. Taste comprises tarte citric zest, grass, wood must, base funk, oak, pale malts. Medium bodied, fine carbonation, semi drying close with a tangy citric climax. Decent enough offering if lacking some complexity for the ABV.

Keg at the indy man beer con. 2019. A hazed golden orange coloured pour with a sticky white head. Aroma is earthy lemon, straw, grape, little vinous fruits, grape,. Flavour is composed of semi sweet, pear, white grape meloow farmyard funk, vinous must, sweet melon. Palate is semi sweet, rounded, funk, highish frorhy carbonation.

Bottle from Westhill SS. It pours clear pale orangey - amber with a thick, foamy white head. The aroma is bready, deep funk, barnyard, musty, oak, earth, tangy orange, kumquat, marmalade, gummy bears, wine gums, leather and spice. The taste is crisp, dry, slightly tart, nip of acidity, funky, musty, barnyard, plenty of brett, old leather sofa, tannin, tangy citrus, pithy, zesty, grapefruit, tangerine, kumquat, granny smith apple, gooseberry, white grape skin, oily vibes and touch of alcohol warmth with a drying and funky finale. Medium body and highish foamy carbonation. Has a good depth of flavour. Rich and deep. Rustique funk for sure.

BXL ‘19. Fairly hazy orange with an off white head. Aroma of funk, barnyard, citrus and lactic notes. Flavour is light moderate sweet and above moderate sour. Medium bodied with soft carbonation.
