Rustique started life as a ‘clean’ strong Belgian style pale ale. After a primary fermentation we transferred it to Foudre No. 4, that had previously held different mixed fermentation beers.

The residual wild yeasts worked their magic over 15 months to produce a unique wild pale ale.

Sampled at BXL festival. Bit hazy deep orange golden with small head. Apricot, spicy grains, soft gooseberries, light alcohol, oak, dry herbs. Medium sour, almost medium sweet and bitter. Over medium bodied.

Bottle at joes.... Hazy amber.. Small off white head.. Light dry floral sweet funk fruit nose... Juicy orange.. Light dry funk... Soft fruits... Light white grape... Light grape skin... Light dry finish

keg at sussex yard party at Dark Star. Very geuze like and well done. Highly accomplished beer.
