Corail de Saing is a Belgian style Saison with torrified wheat aged in red wine puncheons with Brettanomyces for seven months. Bottle conditioned, oak aged and brewed in collaboration with Paul Hayden and The Wine and Cheese Place to celebrate their 35th Anniversary.

750mL at brewery. Pale beer. The beer maintains a head covering throughout. Aroma balances strong Brett and acidity, which is a really nice way to do things and I rarely see. Some sweet esters of pear and apricot, well melded. Flavor is milder and the esters are lower much lower acidity and lighter Brett. Easy to drink.

Refrigerated 75 cL brown bottle poured into a cup. Clear golden with small white head. Aroma is nice soft tart, light body, medium carbonation, and some lacing. Taste is soft tart yeast.
