We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Please enjoy chilled! Special thanks to Masumi!

Bottle. Clear deep amber color with white head. Aroma is raisins, figs, quite nice. Taste is raisins, cooked vegetables, wut, intensest cooked veggies. Oily mouthfeel with medium carbonation.

Bottle. Reddish brown color. Red fruit in the vinous aroma. Malty sweet alcoholic flavor. Indeed sake-like, with dried red fruit. Sherry notes. Very low on carbon. Interesting beer.

250ml bottle [#05422]. Cloudy brown colour, no head, some off-white to beige bubbles. Sweet-ish and spicy, malty aroma, notes of caramel and toffee, cherry drop, plum, Maesil-ju, a marmite touch, some treacle. Taste is initially sweet malty and fruity, notes of caramel, Maesil-ju, plum, cherry, some treacle, later slightly dry, papery, grassy with hints of nori, algae, more integrated and homogeneous in the last third; well hidden alcohol. Oily texture, oila palate, soft carbonation.

Komeassa boksissa on erilliseen punaiseen jouluiseen paperiin käärittynä pieni pullo, jonka sisältö ei juurikaan vaahtoa lasiin kaadettaessa. Väriltään olut on melko keskiruskea, aavistuksen punertava. Lähes kirkas. Tuoksu alkoholinen, luumuinen, maltaisen toffeinen ja hiivainen. Maku luumuinen, toffeisen makea ja hieman alkoholinen ja konjakkimainen ennen kaikkea jälkimaultaan. Melko täyteläinen suutuntuma, hiilihappoja vähänlaisesti.

Bottle from Boxbeers. Clear amber red without head. Aroma is sweet, malty, caramel, dried fruit, alcohol and light vegetables. Flavor is very sweet and moderate bitter. Sweet finish with warming alcohol. Oily. 080616
