One of the great things about collaboration brew days is the conversations we have while we’re brewing. Here are some of the best of the Q (and some A) resulting from our collaboration brew day on December 17:

Q: Do we have to brew today? I’ve got tickets to the Chargers game and Foreigner is playing the tailgate party!

Q: What the heck are you thinking? Getting three of San Diego’s most hop enamored brewers together and brewing a scotch ale!? One of the least hoppy styles in existence!?

Q: How long does it take to dump 10,000 pounds of grain by hand?
A: About 4 hours!

Q: How long does it take to weigh out 25 pounds of hops?
A: About 4 minutes!

Q: Are you intimidated by Chuck’s beard?
A: It’s all right, but come back when he looks like Billy Gibbons or Santa Claus. He’s got nothing yet on Cecil.

Q: Did you figure in the extract from the brown sugar when calculating the recipe?
A: Ummm, hey! How about we increase the target gravity from 19°P to 20°P, everyone good with that?

Q: What are the wort IBUs? 30!? You mean 130, don’t you? No?

Süßer, fast etwas kaugummiartiger Antrunk. Leicht herb, die Aromen sind wenig intensiv, das Bier wird früh trocken. Die Süße wird geringer und somit auch angenehemr, süffig aber nicht sonderlich gelungen. 9/9/10/9//9

draft@Stone vs. Moeder: dark red/amber with a white head, smells like yeast, fruity hops including grapefruit hops, tastes like bitter, toasted malts, caramel, berries with grapefruit & pine hops, dark fruits, yeast, toffee, brown sugar, booze, not bad

bottle from Ølbutikken. clear dark amber , small lively light brown head. very nice and excellently balanced aroma of malts, caramel, bitterness from hops, but no taste from the hops like the more usual us beers. Of its kind, arma can’t get much better. Flavor is malts, mild but bitter caramel, very faint spicy note (browncakes), bitterness from hops, but no flowery or herbal flavor. alc. is hidden, but gives the beer a good solid feel. palate is soft and thick. Not my favourite kind of beer, but as I see it, very well crafted.

Bottle, 8.8%. Rather subtle aroma, slightly roasted. Seemingly clear dark brown colour. Fizzy, but rather stable, light brown head. The flavour starts off with some malt syrup, turns herbal and spicy and finishes with a bit of liquorice root. The carbonation is not high, but a bit hard. Tastes good, but perhaps could have had a little less alcohol.

Draught at Chez Moeder Lambic Fontainas during the three day Stone Event, 16-18 september 2011. Dark amber / brown color, full off-white head. Smell not much, some coffee, malts and I think mostly caramel. Taste is decent, lightly bitter and some caramel, but overall a bit boring. Medium carbonation, medium body.

Draft @ Stone vs. Moeder event, Moder Lambic, Brussels.

Draught Rim of cream-coloured foam on deep ruby-brown beer. Seriously malty, maltsyrup, coloured malts, dried maize and corn syrup, but nothing cloying, despite the description. Sweet, corny, malty, toffee, but somehow balancec by gingerbread-like notes and hiding hops. Very slick, well-bodied, and well-carbonated, if not visibly so. Scotch... 16/-? Seriously good, one for the maltlovers.

A hazed dark brown ale with a very thin off white head. In aroma, sweet caramel malt with loads of dark fruits, licorice, alcohol warmth, very nice. In mouth, nice caramel malt with dark fruits, plums, alcohol warmth, very nice for a 9 years old ale. Bottle from City Market, btv , 2011.
