750mL bottle at Moeder Lambic Fontainas, pours a cloudy golden with a small white head. Aroma of funky Belgian yeast, wild pitted fruits and some candied sugar. Flavour of wild pitted fruits, Belgian yeast, oak, and funky notes. Very complex with a wonderful complexity. Very unorthodox but expertly crafted. Wonderful stuff.

Bottle at Moeder Lambic during Paul’s pre-wedding beer celebration, Brussels. Pours foggy gold with a soft, white head. Grass and mild fruit in the aroma. Big, ripe mouth-puckering flavor with eye-quivering sourness, some light sugars, decent grassy bitterness, slight fruit notes. Light to medium bodied with lively carbonation. Very tart finish, like tart Warheads, with mild sweetness and tangy but sweet lemon. Very nice. More sour than some of the other sours I’ve had today. Definitely lip-puckering, if you catch my drift. Poured from the proper sour basket. Good stuff.

Aroma is a bit odd and stale with some tart sourness, earthy notes and hints of citrus. Flavour is nice, refreshing and rather sour with earthy notes, some citron and cranberries. A successful blend.

75cl bottle @ Moeder Lambic (17/02/2012), shared with ajax25g for my pre-bday beer celebration. Couleur orangée écarlate laissant une légère brume, le tout sur un col blanc crémeux restant vivace tout au long de la dégustation. Arôme présage un aspect poussiéreux avec un chêne/boisé qui donne un ajout agréable à un bouquet restant sur un profile cour de ferme, funk, léger houblon citronné. En bouche, bière évolutive qui après plus d’une heure de dégustation continue d’impressionner. Palais reste sec, et poussiéreux avec un profile râpant boisé de chêne restant discret. L’alcool poussé à 8.5% laisse un palais qui se veut plus épais que sur une Cantillon habituelle. Sur la langue un picotement épicé/boisé avec un léger côté tropical/agrumes houblonné et une levure ajoutant une pointe de funk. Le chêne reste discret mais rajoute une note douce boisée sur le fini qui reste néanmoins sec et aigre. Un vrai délice qui change tout au fil de la dégustation alternant entre aigreur, fruité, houblons, boisé, etc.

Bottle at Chez Moeder Lambic Fontainas as part of my Pre-Wedding Celebrations. It pours golden-orange, with a decent white head. The nose is surprisingly sweet - pear, apple, melon and nectarine, as well as wood, vinous notes and tartness. The taste is lemon, tart green apple, wood, white grape, red wine, eggy sourness and some residual soft fruit sweetness, with alcohol warmth in the finish. It starts of tart and balances out to slightly sweeter flavours. Great balance, a brilliant blended sour ale.

750ml bottle pours a hazy, dark yellow with one ring of white head. Nose is sweet, woody, bourbon, flowers, vegetables. Flavor is sweet, tart, lemons, orange rind, grapefruit, grass. Medium bodied, tart, lightly hot finish.

75 cL bottle at Moeder Lambic. Pours clear and golden orange with a small, semi lasting and white head. Aroma is mild fruity, leathery and crisp citrusy. Vague ashtray/sulphorish touch. Mild fruity, light citric to acidic. Dry, bitter, citric and yet crisp fruity finish - almost acetic into the far finish. Shivering citric, dry, crisp and mild fruity. Very elegant. Lasting smooth citric impression into the far finish.

2010 Vintage/75 cl. bottle/shared@Chez Moeder Lambic: slightly hazy yellow with a white lambic head, tastes slightly acidic with sour & tart lemons, overall very zesty, getting funky in here & some barnyard, straw & young lambic, hint of lactic, aftertaste is very bitter which is lovely (which is probably the Jambe-de-Bois), great stuff

Jambe de Bois and Cantillon Lambic

Cloudy deep blond color; small head. Mild but very complex aroma: malt, plastic, Parmigiano Reggiano cheese, citrus fruits. Good body, dynamic mouthfeel, given by the acidity; very good blend of the sourness from the Lambic and some residual sugars; delicate fruitness. Wonderful.

Bottled@Pikkulintu, Helsinki. Hazy goldeny orange colour with a small white head. Some floaties. Aroma is sour wood, tart fruits and some quite berryish notes. Flavour is rather Cantillonish sour wood and tartness along with some nice fruityness and mild vanillaish and wooden notes. Pleasant blend.
