Hop, sechuan pepper and lemon peel. All you need to make a great traditional belgian beer. A tiny amount of caramel malts give it a nice reddish colour and a long, round aftertaste. The hops we used (apollo and east kent goldings) bring some citrus notes with a spicy finish. That is accentuated with the lemon peel and the fresh spicy caracter of the sechuan pepper. It makes the beer well balanced with intense flavours.
