IPA stands for India Pale Ale and ours is an American version of the classic style. IPA’s namesake lies in its colonial roots. British soldiers on their way to India drank a lot of beer, but found it would go stale on the long voyages. Meanwhile, brewers knew that by adding more hops, the beer would stay fresh. Voila! A new style was born and it is one we are proud to brew. Southern Tier IPA is a triple-hopped on its journey to your glass for a fully aromatic experience.

Pours a solid deep golden color with a fluffy white head that shows moderate retention and leaves some nice lace on the way down. Smells of citrus and pine with a solid bready caramel malt backbone. Could use a bit more aroma hops. Taste is classic old school ipa, bready caramel grapefruit and pine. It works. Medium body and moderate level of carbonation with a sweet slick mouthfeel. Solid IPA, I would never turn one down, but in the sea of craft these days I’m not sure it stands out enough to seek out.

355 ml. bottle in to a tulip. Clear copper colour with a small, white head that faded fast. Aroma has resins, floral hops, caramel malts and a tea bag note. Taste is bitter but with solid malts in background. Medium body with a surprisingly thick texture. Soft carbonated with a long lasting bitter finish, but with something very malty lurking... Nice, "heavy" IPA.

Clear gold - amber beer. Crispish palate. Nice hops - grapefruit with orange marmalade. Creamy malt base. Finishes with more creamy malt and a mild bitter linger.

Tap. Light amber beer, clear, with minimal head and no lacing. Initial aroma is of grapefruit, with a little sweetness, perhaps caramel, in the background. Flavor is not as good as the aroma - a little citrus, sweet malty caramel, but the hops bitterness is subdued as compared to what the aroma implies. A good, not great, IPA. Would be much better with a little more hop kick in the flavor.

Draft at Beer Temple. Clear amber pour with an off white head. Aroma of fresh fruity hops, citrus and some malt. Flavour is fresh citrus/grassy hops, malt caramel. Medium bitterness going into the finish.

On tap @ Beer Temple. Amber color, clear. Uneven, off white head, good lace. Aroma’s: Fruity, malty sweet. Retronasal: hard hop-bitter and acidic. Flavor is then fairly mild, light bitter, light sweet, grain. Medium body. Finishes medium bitter and grainy. Not the hop bomb that are Westcoast IPA’s but pleasant enough.

Bitter and mouthy. A nice piece of tail off the end - has strong bitters and notes of something else. More bitters follow through with the next few breaths - enough to clean out the bowels and kill anything that moves inside you. Not sure why they don’t serve beer like this with street food in Mexico.

(Bottle from the LCBO) Served around 10C in a nonic pint. Pours clear amber with a very small, short-lived white head. Aroma relatively mild, a little bit of citrus, floral hints and a bit of pine. Flavour is sweet malt with a little bit of caramel, bitter pine hops relatively strong. Mouthfeel relatively light-weight with moderate carbonation. Fairly well-balanced IPA, decent maltiness and bitterness but not terribly exciting, sessionable even @ 7%ABV.

Bottle sample at a tasting at Dancing Camel. Thanks zvikar. DOB 9/23/11. Clear deep golden. Aroma of somewhat stale citric hops and a bit of malt. Flavor is a bit sweetish with a bitter finish with some slightly old hops. Medium-bodied.

Bottle. Slightly sour malt and orange peel/pine hops aroma. Golden yellow color with moderate head. Light barley malt and lightly (especially for an IPA) bitter orange peel flavor. An okay beer but really pretty underwhelming.
