The St. Sebastiaan Dark is a dark, medium to heavy high fermented abbey beer that tastes both sweet and bitter on the tongue. This St. Sebastiaan has a strong, sweet aroma of caramel and malt and gives you a full taste in the mouth. It is re-fermented on the jug and on the bottle by the brewery. The result is a nice, clear beer with a wonderful aroma and, for those who love it, a nice touch of yeast at the bottom of the bottle.

Bottle. An amber beer with some floaties, and a beige head leaving nice lacings. Caramel-sweet aroma with some spicyness, maybe lacking complexity, but quite nice. The flavor is sweet,with dried fruits, spices and bitterness. Effervescent, full-bodied beer, quite sticky in the mouth. A nice one. (080412)

Bottled. Deep brown colour with mediumsized brown head. Leaves some slight lace. Aroma is hops, mild caramel malts, mild nectary sweetness and some yeast. Flavour is mild caramel malts, yeast and quite much wooden notes. Wellbalanced brew, that hides the 6.9% completely.

Pours with a large, rocky, light brown head with an ultra-dark brown body. Good lacing and decent retention throughout. Aroma of hops, honey, clove and belgian sugar. Taste is sweet, slightly yeast, but pretty mild overall with some spices and malts in the finish. A bit fizzy with the consistency of water over the tongue. A good belgian sipper in a nice resealable ceramic bottle.

Bottle ceramic swing top bottle 500ml: Poured a thick black brown color with a bubbly light brown color head. The aroma is sweet malt and caramel to sugar. The taste is a roasted malt with a dry sweet candy brown sugar finish.

Bottle 75cl. Vintage (BBF 290804). Clear medium brown red color with a large, frothy, fair lacing, mostly lasting, light brown to off-white head. Aroma is moderate malty, caramel, brown sugar, alcohol, vintage. Flavor is moderate sweet with a long duration. Body is medium, texture is oily, carbonation is soft. (240807)

16 oz. ceramic bottle. Aromas of sweet dark fruits and caramel malt. Near opaque color, but brilliant ruby red using halogen. Beige head that frothed and laced. Medium bodied. Mild carbonation. Sweet berry and raisin flavors. As the sweetness leaves, a mild bitter arises. The finish begins sweet, but as the sugars rinse away, a mild bitter stays. Dark fruits come and go. Very drinkable brew.

Thanks to Joebrew for donating this beer to Footbalm’s September 2006 tasting. Sadly this beer disappointed. Sweet malt and light fruit aroma. Flavor was sweet but lacked depth, and like the palate was too thin. The beer was also lacking carbonation. It was probably very nice at one time. But what hell is a Belgian brewery doing, if they are adhering to the Reihengesboht?

Bottle. Dark ruby/mahogony color with a thin tan head. Fruity, toasted malt, and yeast aroma. Fruity, dark malt flavor with a bit of spicy yeast and some esters. Smooth. Lingering malt and yeast. Not bad, but lacks some complexity.

Dark brown color, nice creamy tanned head. Strong metal and lemon in the nose same time with caramel and prunes. Medium-bodied - a bit empty, carbonated. Strange metallic flavor also. Otherwise quite enjoyable: fruity but dry with hints of licorice, late hoppyness and some fruits and roasted malts.

Deep red-brown body, thin off-white to buff head. Rich aroma of thick toffee, prunes, raisin, and caramels, with earthy hops and hints of grape. The body is thinner than anticipated, slightly tart, with toast, prune, toffee, caramel, and a toasty finish. The thinness and tart notes are akin to red grapeskin. The marshmallowy softness makes this incredibly drinkable, though, for a Belgian beer. Still, I was hoping for a bit more kick from the flavor after smelling this for the first time.
