The Famous microbe whisperer Aunty-Sour (or Surtanten in her own language) helped us to forrage the mold spore called Aspergillus Oryzae. This is an ancient ingredient used on planet earth to bring forward the mythical fifth taste. When we got the assignment from the Faceless Force to find the super mold, we knew exactly who to contact. When it comes to fungus and germs Aunty-Sour is to be trusted for sure.
Brewed with malt infused by koji fungus. The same fungus used in soya sauce and miso. Gives fruityness, umami and more. Made in collaboration with Surtanten.

Bottled, from Systembolaget. Black with small broen head. Aroma of chocolate, coffee and soy sauce. Mid dry with medium to full body and rounded mouthfeel. Tobacco, caramel, madeira and lot of umami. Peppery, spicy finish. Interesting!

Black with a mid sized head. Aroma is toffee, licorice and soy sauce. Flavor is roasted malt, toffee, licorice and a little bit of raspberries. Harsh finish. Pretty good.
