Blanc de Blancs started as a Biere de Champagne malt bill that was fermented in Chardonnay barrels with Missouri grown Chardonnel grapes. The native Missouri microflora that was present on the grapes provide the sour depth and funky complexity of this wild ale.

Bottleshare: pours clear gold with almost no head. Aroma is grape and wood. Taste is sour, earthy, grapey, deep complexity. Quite good.

Bottle, at bottle share, thanks to mansquito. Pours gold. Lemon, gooseberry, vanilla, white grape, passionfruit, green apple, little lime, nice sharpness, good oak, complex and balanced. Good spritzy body. Excellent. Really excellent.

(375ml Batch 2 bottle from Mikkeller Webshop) Pours nearly clear dark gold with no real head to speak of. Notes of acidic white wine, high tart stone fruit, gooseberry, fresh grass, white pepper, rather high lactic acidity, moderate oak, there's some funk on the nose and very softly on the tongue. A bit mineral, touch of Champagne-like yeast too. The high acidity dries off later in the sip, crisp wine-like finish. Medium bodied with rather high popping champagne carb. Nice flavours but a bit brash on the acidity, as happens sometimes with SP. Booze is mostly hidden. Solid.

375ml bottle. Heavy, vinous and tartish with loads of grape juice, funky sourness and oaky notes. Aggressive.

Bottle. Color: Hazy golden, fast disappearring white head. Fizzy, a lot of tiny bubbles. Aroma: Tart grapes, some funk. Taste: Moderate to medium tart and moderate sweet, fruity grapes and grapeskin, notes of wild yeast funk. Some Acidic vinegar notes. Very light bitterness. Above medium body, just below average carbonation. Notes of wood, tannins. Dry and astringent mouthfeel. Very nice.

0,375l bottle at home. Blend #2. orange murky color, no head. smells of white wine, peach, stone fruits, berry notes, grassy. very nice smell. full body, fizzy carbonation. tastes of white wine, stone fruits, peachy, grassy, bit lactic, spices, peppery, some wood, citric. finishes quite dry and medium sour with lactic notes, grassy and citric notes. good stuff. quite dry, which is a surprise the high abv, very fizzy, nice flavours, but a bit too sour to give this a higher rating. none the less very good.

Bottle @ Berry Bonanza Extravaganza, Ratebeer Odense June 2019. Pours Hazy yellow with a bubbly head. White Wine, funk and Wood. Warming alcohol. Smooth and dry.
