Byrd Brain was inspired by sonic exploration and the exquisite technique of a French trained saucier. Brewed with lemon, salt, black pepper, nutmeg, eggshells, and flour, this beer underwent both its fermentation and aging in puncheons that previously held wine. A psychedelic fusion using the exquisite hollandaze as our muse. After 18 months of oak aging, this Mixed Fermentation Saison exudes notes of Meyer lemon custard and black peppercorns.

500mL bottle, pours a cloudy dull yellow with a small white head. Aroma brings out oak, wild yeast, and some citrus. Flavour is very yeasty, wild yeast and oak. Way too yeasty and murky. No good.

This beer is a slightly hazy yellow-gold color with a medium thin white head that dissipates steadily to an outer ring. Stringy lacing. Aroma of oak, yeast, fruit and malt. Medium body with flavors of funky citrus, peppery yeast and malt. The finish is lemony with a mildly funky yeast aftertaste. Pretty good overall.

Refrigerated 12.7 oz. brown bottle poured into a cup. Hazy yellow with medium white head. Aroma is tart lemon, medium body, medium carbonation, and some lacing. Taste is intense sour lemon and pepper. Nice beer.
