Mixed Fermentation Saison Style Ale brewed with lemon, salt, black pepper, nutmeg, eggshells, and flour, fermented and aged in oak wine barrels

Byrd Brain was inspired by sonic exploration and the exquisite technique of a French trained saucier. Brewed with lemon, salt, black pepper, nutmeg, eggshells, and flour, this beer underwent both its fermentation and aging in puncheons that previously held wine. A psychedelic fusion using the exquisite hollandaze as our muse. After 18 months of oak aging, this Mixed Fermentation Saison exudes notes of Meyer lemon custard and black peppercorns.

Pale blond with thin head. Aroma and flavour have a little vinegar acidity. The lemon is recognisable but the other weird ingredients don't come through. It's rather tart.

Bottle shared at the RateBeer DC tasting. Clear golden yellow, off-white head. Aromas of tart notes, herbs, spice, stone fruit, oak. Tastes of tart notes, stone fruit, herbs. Medium body.

50cl bottle pours a honey gold with basically no head. Nose is interesting, some lemon, there's uncooked cookie, lemon candies. Flavor has more, lemon and guava, some slick gristy notes, some spice, weird cookie. Tart finish. Odd. 6 3 6 3 11

500 ml bottle into tulip glass, 2018 vintage bottling. Pours slightly hazy pale golden yellow color with a small fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big sour/tart/tangy lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, black peppercorn, salt, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of nutmeg, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast, lemon, black pepper, salt, wine barrels, and moderate pale/wheat malt notes; with great strength. Taste of big sour/tart/tangy lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, black peppercorn, salt, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of nutmeg, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Light-moderate fruity/lactic tartness, wine tang, and yeast/oak spiciness on the finish. Lingering notes of tart/tangy lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, black peppercorn, salt, hay, straw, grass, wheat, cracker, bread, light leather/funk/vinegar, and yeast/oak earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, lemon, black pepper, salt, wine barrels, and moderate pale/wheat malt flavors; with an awesome malt/tart/sourness and tangy wine balance; with no puckering flavors after the finish. Light-moderate increasing dryness from lingering tart/sourness, wine tang, and yeast/oak tannin spiciness. Medium carbonation and light-medium body; with a very smooth, moderately grainy/acidic/tangy, fairly crisp/tannic, and lightly saline balanced mouthfeel that is great. Minimal warming alcohol for 6%. Overall this is an awesome fruited/spiced wild saison. All around great complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, lemon, black pepper, salt, wine barrels, and moderate pale/wheat malt flavors; very smooth, easy, and fairly crisp to drink with the modestly acidic/tangy/tannic/drying finish. Not overly lactic or salty. Outstanding balance of lemons, peppercorn, Brett/Bacteria complexity, and wine barrel presence/integration; with a nice pale/wheat malt backbone against acidity. A really enjoyable offering, and spot on style example as expected.

500ml bottle at the late December DC RB Tasting. Poured a hazy golden yellow color, quite pale, with a small white head. Aroma was light tartness, very mild. Flavor was similar, light tartness, but not overly acidic or anything.

From a 500 ml bottle at the Dec 30, 2018 RB gathering it is an effervescent clear golden color with an off white head. The aroma is sour with hints of mustiness and the taste is strong .sour grapes.
Still not a fan of sour beers!

500 ml bottle. Flavor is intense lemon rind, oak, sour grapes, sharp pucker in the finish. Massively sharp barrel character. Ummm, to sharp oak and lemon rind.
