To the rescue, a tale of ups and downs during the perilous fermentation of this mixed culture sour. Originally intended as a 100% Brett. beer, it soon became apparant that it needed a friend. In spirit of the funk, it came in the shape of a re-used saison strain.

Near the end topped up with a moderate dose of raspberries and cherries, which alongside the Brett. delivered a subtle tart and pinkish red glance.
