33 cL bottle. 4 year old vintage. Pours hazy brown with a lacing off-white head. Malty and light spiced nose with a light citric note in addition. Flavour is mild fruity and mild caramel malty. Smooth and well balanced. Ends with a nice spiced yeasty note.

(bottle, traded with bierkoning) Slightly hazy, ruby colour with a medium-sized off-white foamy head. Dusty, sweet malty, slightly toasty and dried fruity aroma with spicy herbal notes. Sweet flavour, toast-malty taste, ashy with notes dried fruits (raisins); full bodied, moderately carbonated mouthfeel; sweet-bitter finish with a medicinic touch.

Bottle. Yeasty, sweet, dried fruit, peppery aroma. Cloudy, very dark brown colour. Unstable head. The flavour is mildly roasted. Not as sweet or peppery as expected, but with a nice balance between sweetness and alcohol. Some yeast in aftertaste.

(Bottle 33 cl) Vintage 2002. Very dark brown and very unclear - almost Trappist look. And Trappist beers also comes to mind in the flavours which are extremely rich and full with lots of roasted malts, dried fruit, candi sugars etc. With a good bitter finish to round things off. Excellent. 100104

Again a bad brew by Sint Servattumus. This stuff is homebrew with loads of yeast. Sour yeasty smell overwhelms the potentially nice roasted malts and licorice. Very unbalanced brew, disappointing.

A deep red beer with a huge brown head. The aroma is sweet and primarily yeasty, but also with hints of roasted malt and caramel as well as metal. The flavor is sweet and very fruity, but also with notes of prunes, metal, wood, old raisins leading to a smooth and lightly dry finish.

Brown color; the head disappears quickly. Some malt aroma, too much carbonic gas nose, metallic. Strong caramel character, with a roasted malt note, metallic as well. Strong, drinkable, but really brewed without know-how.

The 2002 St. Servattumus is not brewed at Schijndel, but at de 3 Horne in Kaatsheuvel. It says so on the label! Very uneven bubbling to creamy head, big and small bubbles jumble, fast dissipating. Very dark-brown beer. nose of chocolate malts, milk chocolate, mocca, and a spicy, fresh-smelling pinewood-ish aroma. Bitterish taste. Roasted malts in the first place, but some hops all the same. I seem to detect some light-induced off-taste. Licorice in the finish. Thin texture, only medium-bodied. Flavours gradually dwindle to simple sweetness. Edo has drunk this too young, I fear. He missed this very nice nose. Too bad for me, the beer goes downhill from there.
