Part one in a series of three pétillant naturel batches exploring the varied terroir and orchard history on Pender Island. North End features the King of Tompkins County apple variety from a settler orchard of dry-farmed, full-standard King trees established on North Pender in 1895. Macerated, native yeast ferment, bottled in the ancestral method. Chill upright and pour gently off the lees.

750mL bottle, pours an opaque golden yellow, almost no head despite it exploding from the bottle upon opening. Aroma has plenty of wet hay, horse blanket, and dry apple skins. Flavour is bone dry, with lots of hay, gentle horse blanket, and a touch of apple skins. Not the most sophisticated funk expressions of Twin Island, but it’s extremely well-crafted; finishes dry, hay-like, and very drinkable. Very good.

Dullish yellowy sort of colour, like slightly oxidized apple flesh. Light apple, some bit of tannin. On the palate, fairly dry, with apple skin and oxidation. Slight off-note, I guess that's from bottle refermentation or something?

750mL bottle. Pours blonde with lots of murky yeast. Loads of dry apple skins and must on the nose. Flavour has a very dry apple character, skins, straw, some musty yeast, mineralic finish. Nice dry cider, but not the most complex.

Cooked apple with some sweetness. Cloudy yellow gold. Dry and skins of apple with a light fruity. Solid.

Pours cloudy orangey gold with mellow but stable foam, bubbling away. very nice colour. Smells deeply of fresh apples which I couldn't describe, maybe green skinned, complexity abound but still sweet and on the sugary side. Flavour is smooth apple, chunky and kind of like a sweet apple pie in all its freshness. Mouthfeel is full and sweet but not cloyingly so and the alcohol is present but still well in the background. An incredibly good cider, pulling apple flavours together that I don't normally see.
