Maybe the special wild yeasts that treated the funky, earthy notes in the dry, unfiltered cider were brought in with the sacks of hedgerow apples gathered close to the Lewis Pass. If this cider were a cheese, it would be runny, barnyard, tangy and delicious.

Can at Pasture restaurant in Auckland, served in a broad wine glass, paired with their 'pig crumpet', a pork infused pastry. Huge apple funk on the nose, exceptional even, cheese and apple working in harmony. Great orange body and a bit of head. Flavour is all messy funky apples with yeast and fresh hay, rotting cheese. Full crispness and fully natural, there is everything to like about this cider that really feels like it connects with the earth.
