FERMENTED WITH A BLEND OF THREE DIFFERENT STRAINS OF BRETT AND ACIDIFYING BACTERIA, THEN AGED FOR ONE YEAR IN OUR OAK FOEDER. A FOEDER IS A LARGE WOODEN VESSEL AND IT’S POROUSNESS CREATES THE PERFECT ENVIRONMENT FOR AGING WILD AND SOUR BEERS. THIS BELGIAN INSPIRED BROWN ALE IS AMAZINGLY COMPLEX, BLENDING OAK WITH FRUITY ESTERS AND A HINT OF TARTNESS.

Deep jet brown with a small light brown head. Chocolate and balsamic notes. Dark and rich, almost cocoa like with a balsamic note. Not tart, not light, quite rich. Odd, but almost good.

The aroma is deep funky ruby malt with red wine hints and lots of bretty yeast. Has a murky dark brown body and minimal beige head. Flavour should be a 7 but it really shouldn't be - there's all sorts of awkward molasses and chocolate syrup and brett yeast that is almost working together but ultimately comes across as a sugary syrupy mess. Mouthfeel is full enough but there's that hmmm factor of the oversugared dark caramel here that's pretending to be beer... can I see your ID please? Like many of this brewer's concoctions it comes across as awkward and undefined. Too much sugar and syrup thrown in and not nearly enough attention to detail to make it all work.
