Lambic Style - Untraditional Rotating|

This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer!
Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic.
We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

Clear golden colour, white head. Aroma of brett, stable, lambic, citrus. Sour flavour, very sour. Citrus, citric acid, brett. Quite sour, but somehow still with some balance.

@ Cantillon Quintessence. Pale yellow colour, white foam, soft carbonation. Aroma of green apples. Sour taste with notes of lemon peel. Complex and tastefull.

Bottle sample @ Cantillon Quintessence 2014. Dorée claire, col blanc léger. Arôme est malté avec ce rappel moût sur un rétro aigrelet et fleuri accompagné d’un léger fruité citronné. Palais est sec et terreux voire poussiéreux. Belle effervescence sur un léger fruité citronné et agrumes ajoutant au profil général aigre. Grade un petit rappel lambic aux teneurs fleuries.

Sample at SF Beer Week Opening Gala 2014 and a couple of glasses at the brewery. Hazy golden with a minimal head. The aroma was really great with funk, oak, fruit and hay. The taste was also a winner. Balanced and elegant with funk, oak, fruit, some light berries, hay and with a nice sourness. Light body and low carbonation. Easy to drink, an excellent beer. I guess that this one was the best one during my visit to SF in February 2014.

Draft - Sweet and sour citrus with a bit of funk. Clear pale gold with a thin persistent white head. Peach, soured lemon and a powdery finish

Bottle @ Exira Beer Summit IV, Day 2. Thanks to womencantsail for sending! Batch 5. Pours a fairly clear golden orange appearance with a thin white head. Cheesy, funky herbal, chewy woody, very lemony, lactic flavor. Quite sour, big lemony, very cheesy, slight pineapple, grassy/woody herbal, very funky flavor. Glad to have finally tried this and it’s fun, but not quite what I hoped for. In terms of what they seem to be going for, I think Allagash has done superior work with spontaneous fermentation. Thanks again, Andrew!

Batch 5 - 011012 375mL bottle. Aroma is great with a big barnyard funkiness and medium lactic acidity note. Hints of an herbal character are present and there is a faint oak note. Light fruit esters of cherry and pineapple. A really nice aroma - not truly gueuze-like but similar with a nice American sour quality to it. Pours a cloudy pale yellow gold with a medium sized, thin, white head that recedes fairly quickly but a thin film lingers and is replenished by rising bubbles. No leaving our legs. Flavor is very sour, more aggressive than most gueuzes. Medium low barnyard funkiness with a lot of citrus acidity. Some moderate herbal character with medium light oak notes. Fairly complex but lacking some of the fruitiness that the aroma had. Faint cherry and pineapple. Mouthfeel is medium light to light bodied with medium high carbonation. Low acidic astringency and low to medium low alcohol warmth. Overall if you are comparing this to a gueuze Beatifaction would lose but it is an amazing sour. The beer has a lot of similarities to a traditional gueuze but with a bit more acidity and an American twang to it. It lacks the gracefulness that traditional beers have, but has more complexity and is more enjoyable than almost any American sour out there.
