This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer!
Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic.
We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

Thnx to ships ! Pours fuzzy blonde . No real foam Smells realy funky Taste is very straight sour . With a funky back Ok , but after supplication a bit of a downer . still awsome though re-rate anno 2018. keeping the same score, but I wanna go a bit deeper in information though. the beer has a nice, complex, tart, oaky aroma and taste ( comes rather close to a real geuze ) but very, very dry ( a tad to dry for my taste )

Obtained in a trade with stupac2. 375 ml. bottle shared by 3. Bottled on 10/01/2012. Probably batch 5. Hazy golden with some white bubbles. Nose is pure horseblanket, bitter pure funk, white pepper, raw, pure wild hay,... much like the taste & that of Resurgam this proves that the whole regional thing in nonsence. It is all just terroire. Taste is that of puckering lemon, raw barn, hay, funk, very acidic but nicely, pure lemon juice, nice funk, white pepper, burn, acidity, light hay,... Might have used a bit more complexity but incredible never the less. Lower carb. Light body, very easy to drink.

Thanks to Beer Savant for sharing a bottle from batch 002 and 005 during his 50th birthday bash. The beer pours a clear bright golden color (progressively cloudier) with a medium frothy white head that diminishes steadily. Partial rings of lacing on the glass. Aroma of brett, citrus and oak. Light-bodied and moderately sour with flavors of funky fruit, yeast and spice. The finish is tart with a bretty yeast aftertaste. Really good all around.

Comparison with Batch 002 and Batch 005. Small white rim over hazy orange-yellow beer. Brett/lambicnose - excellent. Perfumy and citrus-filled. Batch 005 more expressly lemon, 002 more restrained. Citrus, vinous qualities in abundance. White winecharacter as Chardonnay, and more lemon (005). Batch 002 has some maltcharacter, milder. Sharp, spritzy, effervescent. Refreshing as few, even when the 002 has this less, of course, seen its age. Yet another one of Vinnies’ masterpieces. Probably more lambicky than the 001, but the admiration is equal.

Poured a cloudy yellow straw colour. Carbonation was initially high but became lifeless rather quickly. The aroma is big fruit and sour. Think lemon. The flavour is sour and fruity. The sourness hangs on the palate forever. A nice beer to taste but that's where it ends.

Bottle shared. Pours cloudy straw with a ring off white head. Aroma of horse blanket, barnyard funk, grapes and tarte fruit. Flavour is fairly heavy sour. Medium bodied with soft but prickly carbonation. A nice sour, but overrated in my opinion.

Bottle. Woody vinegar and sour grape aroma. Golden yellow with moderate but short lasting head. Very sour/tart vinegar and musty lemon flavor. Like I’m back in Brussels.

Bottle. Golden with a moderate white head. Funky, fruity, lactic, woody, vanilla aroma. Tart fruity, funky brett, spicy woody, and light vanilla flavor. Medium body, moderate acidic burn, lively carbonation.
