This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer!
Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic.
We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

Batch 005. Bottle thanks to amtran87 at Toronado. Pours a cloudy orange color with a large white head. A rich nose of wood and sour tart fruit, hay and light vanilla. The flavor is very interesting; woody, hay, rich tart sourness, at times very sour, seems like Pils malts, lingering sour wood. Complicated but very smooth and tasty. Lots of brett and layers of sourness. Very nice palate with loads of complexity.

Batch 002. Bottle looks simple but good. Beer in the glass deep golden, no head. Starts very intense sourish, salty, a bit moldy. Dry background. Fruity like lemon and grapefruit. Finish a bit milder, but still very sour. Not my favourite!

Batch 002 375ml bottle. Received in trade from largadeer, thanks for the opportunity. I can smell the funk as soon as I pop the cork. Pours a crystal clear deep golden color with a good sized white head that sticks around for a while. Smells of barnyard funk, lemon, tart fruits, and leather. Smells very tart, I think I’m in for a treat. The taste is mouth puckering sour and dry with lots of tart fruits especially lemon and sour orange. Hints of horse blanket and tobacco round it out. Leaves a bone dry finish in which you can feel the lactic acid burn down your throat until it splashes into your stomach. Every sip leaves your mouth watering for more. Medium low carbonation, Medium light body. Wow that’s a great sour beer! Lots of acid, some funk, very little vinegar. Vinnie you’ve done it again.

Bottle thanks to JohnGalt1. Pours golden yellow topped with a small fizzy head. Aroma was of sour grapes, light vanilla, and some citrus. Taste was very nice with more of the sour, tart green grapes, a little wood, some other fruit notes , and a little funk.

Bottle @ caesar. Hazy light golden colour, small white head. Aroma is sour apple, barnyard and peppermint. Flavour is light malted, sour, hint of barnyard, some tartness. Initially sour, later a bit softer. Great stuff.

Entered to celebrate my 5800th Rating. Bottle @ Ulfborg Friday Night Tasting Session. Thanks to J&C. Pours clear golden with a small off white head. Nose is tart. Brett, farmhouse and horseblanket. Some lemon and wood. Tart, crisp and very dry end. Luvly!

375ml bottle pours a hazy gold with a thin, white head. Nose is HUGE with brett, hay, band aid, farmyard, horsey, cheesy, herbs, spices. Flavor is tart, lemon juice, grapefruit rind, huge tart brett, hay, spices, white pepper, rotted tropical fruits. Full bodied, tart, acetic finish. Really good.

Bottle, 2007, at the Funky 6. Pours cloudy gold with a slight, white head. Lots of brett and tart fruits in the aroma. Flavor begins with fruity sweetness, then quickly becomes quite tart and acidic with light wood notes. Medium in body with soft carbonation. Finishes sour and lightly musty, with lingering acidity. Very nice. (4.1)
Bottle (Batch #5) at THE Sour and Saison Tasting, London. Big thanks to Bruce. Pours mostly clear with a wispy, white cream head. Moderately tangy nose with hints of citrusy sugars. Light to medium sweet flavor, some spiciness, good tang with a bit of bite, light grassy bitterness. Light to medium bodied with fine to average carbonation. Decent, dirty grass hop finish with nice sourness, along with some anise qualities. A very good American sour. (4.0)
