This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer!
Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic.
We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

Bottle shared by Shane, thanks! Poured a very hazy yellowish gold with a white head that dissipated to the edges. Aroma was quite sour with a nice backing of brett funkiness. Flavor was a perfect balance of sour (particularly lemon) and brett funk that went down real nicely. A truly amazing beer.

Bottle, 375ml corked. It pours a clear, golden body almost entirely without head. The aroma is funky, barnyardish with horse blanket and citrus. Lemony, fruty and funky flavor, sour finish. Smooth, medium bodied and astringent in the mouth. A very easy drinkable beer with a lovely aroma. 100326

bottle at Fort Wayne tasting, big thanks to thedm and hotstuff for this very rare in Indiana brew - Pours hazy gold with has a very funky, sour aroma. The flavor is chock full o’ brett with an underlying sweetness and tart, sour flavors dominating. It’s medium bodied and overall an enjoyable, creative brew.

Batch 3, 750 ml bottle courtesy of GT, the results of a great trade. Clear to cloudy golden with a medium white head. Aroma of lemon and grapefruit with a background of white pepper. Very full bodied. Flavor starts with citrus and progresses to a complex sourness, with a dry finish. Very interesting. Not funky. Great example of the style, although you can;t say the style out loud.

750 ml corked and caged bottle. Batch 003, courtesy of beastiefan2k. Enjoyed with Alagnak. Pour is a hazed golden yellow with a one inch white head, that falls with nice lacing. The aroma is sour lacto, along with a very dry Brett, and a nice woodiness. Taste is mouth watering lemon citrus sour up front, moving quickly to the very drying barnyard Brett characteristics. The dry finish also reveals oak woodiness. As with the initial tasting of this beer, the sour punch fades quickly after the first sip. Palate is medium to light bodied, fine active carbonation, and the dry clean finish. Really clean and drinkable beer. (8,4,9,5,17 - 4.3). Identical score to last time, though it was a quite different beer - interesting.

Rating #1,500. 750 ml corked and caged bottle. Batch 003, courtesy of beastiefan2k. Pour is fully hazed yellow golden with a pure white one inch head. The head falls fast with only slight lacing. Aroma of sour tart citrus, woodiness, soft acetic rounded vinegar sour on top of that. Active, sour and wild. On first sip, taste is really sour, super tart - just attacks the taste buds. After the initial sip, sour mellows some, nice funkiness comes out, with the wood behnid. Excellent melding and transition of flavors. The sour is the most intense on the initial sip, settling down a notch in subsequent sips. Palate is light medium with spritzy carbnoation. The active fine carbonation along with the sour perfectly tickled the mouth. Super drinkable, fun beer. Finish is pretty brief, and clean. Thanks for getting this one for me Eugene. I think I will sit on my other bottle for awhile and let this guy really dry out. (8,4,9,5,17 - 4.3)

Bottle 375ml. @ home.[ Trade by Bobby91w ]. Clear medium orange color with a average, frothy, good lacing, mostly diminishing, white head. Aroma is moderate to light heavy citrus - tart - acidic, barnyard - leather, wood. Flavor is moderate moderate to heavy sweet and acidic - sour with a long duration, and a dry finish. Body is medium, texture is watery to oily, carbonation is soft. Very nice og lovely, but not as complex as smoe of Belgien one’s ;o) [20090606]

Bottled - had it twice with the exact same score. An unclear golden beer with a thin white head. The aroma has lovely notes of wood, brettanomyces, and lacto basillicus as well as medium notes of citrus fruits - seemingly both sweet and tart. The flavor is acidic with a bit of sweetness and notes of lemon, wood, brettanomyces, and other fruits, leading to a lovely tart finish.
