This spontaneous fermented beer has been aged in Hungarian oak barrels and appears with a light amber color with almost no head.

The aroma is huge and very vinous. A clear impression of oxidized apples is the first thing that hits you, which made us think of heavy old fashioned British apple ciders. The aroma also reveals the wooden notes from the barrels along with some burned toffee and spices like Star anise.

It has a very heavy acidic profile at first, one that quickly slides into a smooth kind of sweetness. We taste green apples, carambola and very young green grapes. It has a certain lactic acidic touch and a creamy dry finish that lasts forever and bares the green impressions through.

Some mild creamy blue cheese on roasted rye bread would work great due to both the lactic and acidity impressions in this beer.

Mikkeller’s attempt at unblended lambic - something I always regard with a certain amount of suspicion if it doesn’t come from the Zenne valley region. Apparently concocted at the ’Proef’brouwerij with lambic yeast and matured on new Hungarian casks. Practically no head as it should be, only some loose, big bubbles on the edges of the glass. Deep orange blonde colour, hazy. Complex, very estery and therefore fruity aroma indeed reminiscent of a ’flat’ lambic, sherry, orange, sour cream, lemon juice, barnyard, hay, flowers. Classic lambic taste, green apple, sherry, citrus peel, no carbonation, sourish but in a more lactic, ’malse’ way not unlike Girardin young lambic but lacking a bit in complexity, more reminiscent of what e.g. Van Honsebrouck does (’imitation lambic’ so to speak, although that would be putting it a bit perhaps too disrespectful). Complex finish though, and all in all, a very believable attempt at one of the most elusive and idiomatic of beer styles.

No head left. Orange-ochre beer. Brett, lemon, wood, old barriques. Sour, in the true malse way, even some hints at maltsweetness. Woody, lipsmacking acidity, lactic and lemony. Dry, dry-out effet, long lasting flavours. Very good West-Flemish gueuze (hence h... for the initiated).

Bottle bought @ The Mikkeller webshop. Pours hazy deep orange with a thin frothy and fizzy offwhite head that doesn’t leave any trace on the glass while dissipating. Smell is sour, tiny fruity and funky with crackers, lemon juice, grapefruit juice, moist hay, dry soil, leather, barnyard, grape skins, moist wood, horse-blanket, orange zest and lemon zest. Taste is tiny sweet, tiny bitter, sour, funky and slightly fruity with sourdough crackers, lemon juice, grapefruit juice, grape must, moist wood, white raisins, leather, barnyard, hay, dry soil, horse-blanket and orange zest. Mouthfeel is soft, slightly flat, dry, tart and light to medium bodied. Finish is sour and slightly fruity with sourdough crackers, lemon juice, grape must, moist wood, hay, dry soil, barnyard, horse-blanket, minerals and lemon zest. Lacks the champagne-like carbonation you love in this kind of beer. All in all a solid lambic though…

375ml bottle at BierCab in Barcelona. Pours a clear, deep gold with some thin, cloudy white head. Nose is so spot on, pithy, funky, wood pulp, plenty of bandaid, grapefruit, vitamin c, a little vanilla lurking. Flavor is a bit milder actually, grapefruit, some vitamin c, a little taro root, white grape, tangerine, a little herbal. Finishes super smooth. Wouldn’t mind a case to cellar and see if some more funkiness or pithiness develops over time.

Bomber from The Davis Beer Shoppe. Poured orange with no head. Light sour, somewhat lactic aroma with fruit. Med minus body. Flavor is like aroma. Gueuze in a very nice, moderate, delicious version.
