For our hopping regime we went with Cascade and Nuggets in the boiling addition. Centennials were added every 5 minutes for the last 30 minutes of the boil. We added Crystals into the whirlpool. Dry hopping was done in both the fermentor after primary fermentation and the bright tank. We used a mixture of Chinook, Nuggets, and Sterlings in the fermentors and whole leaf Centennials in the bright tank.

Well done and well balanced without having any kind of special character. Just a nice, well constructed DIPA. Hazy amber pour with good head and lacing. Bitter finish with tangerine and a touch of booze. Bottle from a Total Wine in Maryland.

Bottle in garden, 11th September 16. Pours dark Amber. Aroma is pineapple, peach, citrus. Taste is tropical fruit, soft pineapple, citrus, slight pine, slight creaminess. Nice stuff and easy drinking

Draft pour into goblet. Aroma is malt base, citrus, fruit. Appearance is greenish yellow with finger-width white foamy head with decent retention and tons of sudsy lacing. Taste is as aroma. Palate is medium bodied with thick texture, soft to average carbonation and nice fruity finish. Overall, this scores high across the board.

12 ounce bottle into tulip glass; best before 3/14/2016, listed at 8.2% on the bottle. Pours lightly hazy/cloudy deep golden yellow color with a 1-2 finger fairly dense off white head with good retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings around the glass. Aromas of big grapefruit, tangerine, pineapple, peach, mango, lemon zest, orange peel, citrus rind, light pepper, pine, cracker, bread, herbal, and floral/grassy earthiness. Damn nice aromas with great balance and complexity of bright citrus/tropical/piney hops and light-moderate pale malt notes; with good strength. Taste of big grapefruit, tangerine, pineapple, peach, mango, lemon zest, orange peel, citrus rind, light pepper, pine, cracker, bread, herbal, and floral/grassy earthiness. Good amount of pine/citrus rind bitterness on the finish; with lingering notes of grapefruit, tangerine, pineapple, peach, mango, lemon/orange peel, citrus rind, pine, and herbal/floral/grassy earthiness on the finish for a while. Fantastic complexity, robustness, and balance of bright citrus/tropical/piney hops and light-moderate pale malt flavors; with a great malt/bitterness balance and zero cloying flavors after the finish. Nice moderate dryness as well from bitterness. Medium carbonation and body; with a very smooth, moderately crisp/sticky/resinous, and slightly creamy/bready mouthfeel that is gret. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an awesome DIPA style. All around great complexity, robustness, and balance of bright citrus/tropical/piney hops and light-moderate pale malt flavors; and very smooth and crisp to drink for the ABV. A highly enjoyable offering.

Hazy orange color with small white head. Aroma is tropical, pine needles, grapefruit, some caramel. Taste is heavy, juicy, similar to the aroma. Quite an extreme unbalanced bitterness. Smooth carbonartion. Alright but not top.

12 ounce bottle. Hazy orange gold color. Foamy wife head. Aroma has notes of apricot, caramel apples, citrus and perfumy pine hops. Flavor is more of the same, with caramel, apples, pine needles, tropical fruit and a big dose of spicy bitter hops. Some mango and boozy notes in mid taste. Bittersweet toasted malt is eclipsed by the huge hop bill that dominates this DIPA. Dry bitter finish and aftertaste.
